Highest-Protein Meats: Ranking per 100 Grams

Lean cooked meats are closer together than most protein rankings make them look: most fall around 27–33 g per 100 g. Cut and cooking water loss can matter as much as the animal itself.

Search for the “highest-protein meat” and it sounds as though there should be one obvious winner. Put comparable lean cooked cuts on the same scale and the more interesting result is how close they are: most land between about 27 and 33 grams per 100 grams.

That changes the question. Instead of chasing first place, it is more useful to see how large the gaps really are, how much cooking water loss influences the numbers and what starts to matter once protein is nearly tied.

Rabbit sits at the top and lean pork at the bottom, but the entire spread is only about 6 g per 100 g. Chicken, turkey and lean beef are even closer at 31, 29.5 and about 29 g. This is less a division between “high-protein” and “low-protein” meats than a cluster of already protein-dense foods.

On a normal plate, the leader pulls away much less

A 5-ounce / 142 g serving of rabbit provides roughly 47 g protein and chicken about 44 g. Turkey supplies about 42 g, lean beef around 41 g and lean pork around 38 g.

Lean beef and turkey breast both sit near 29–30 g protein/100 g, yet beef commonly provides around 2–3 mg iron/100 g compared with about 1 mg in turkey breast. That is a more meaningful distinction than half a gram of protein.

Pork shows why the cut deserves equal attention. Lean tenderloin may be near 27 g protein and about 5 g fat/100 g, while bacon can exceed 40–50 g fat/100 g. The animal is the same; the food on the plate is nutritionally very different.

Cooking explains why protein rises per 100 grams

Raw chicken breast may contain roughly 22–23 g protein/100 g and cooked breast about 31 g. Cooking did not create protein; it removed water.

If 120 g of raw meat containing 27 g protein finishes at 90 g after cooking, those same 27 g are now concentrated into less weight. Raw-versus-cooked comparisons can therefore create artificial “winners.”

Cured and dried meats concentrate protein — and sodium

Jerky and cured ham can match or exceed fresh cooked meat per 100 g because much of their water has been removed. A cured ham can land around 30–35 g protein/100 g while also carrying a substantial amount of sodium.

The protein number is legitimate; the product is different. A fresh loin and a dried or cured meat are not interchangeable just because they appear close in a protein ranking.

Rabbit and chicken breast sit near the top, but turkey, beef, lamb and lean pork remain close. Within this group, choosing a lean cut and varying protein sources usually matters more than chasing a few extra grams per 100 grams.
