Cooked salmon can be refrigerated for 3–4 days at 40 °F (4 °C) or below under USDA guidance for cooked fish and seafood. Refrigerate it within about two hours after cooking and freeze portions early if they will not be used within that window.
Salmon color varies too much to be a precise safety test. FDA guidance uses 145°F (63°C) for finfish; measure the thickest part with a food thermometer. Opaque flesh that separates easily is a useful fallback cue when you cannot measure.

Tough meat can come from opposite problems. Tenderloin or other low-connective-tissue cuts become firm and dry when overcooked, while chuck, brisket and shank can remain chewy because collagen has not had enough time at elevated temperature to soften.
