Does boiling wash nutrients away?

The potato itself changes less than many people expect. Glycemic response is affected by more than the oven or pot. Potato variety, how thoroughly it is cooked, whether it is mashed, whether it is cooled, and what else is eaten at the same meal all influence how quickly carbohydrate is digested. A fluffy baked potato eaten alone can behave differently from cooled potato in a salad with olive oil, vegetables, and protein. This does not mean one method is automatically suitable or unsuitable for everyone, but it shows why a single glycemic-index value should not be treated as the complete nutritional verdict.

Sodium is another hidden variable. A plain potato is naturally low in sodium, yet commercial baked potatoes, seasoned wedges, instant mash, or restaurant sides can contain much more because of salt and sauces. If blood pressure or sodium intake matters, controlling seasoning may be more important than choosing boiled over baked. The same logic applies to fat: the potato itself is very low in fat; most of the fat in common potato dishes is added during or after cooking.

Choose based on texture, recipe and what you need to add to enjoy it. When the comparison is plain potato against plain potato, boiling and baking are much closer nutritionally than their appearance suggests.
