A pear can feel decent on the outside and still reveal brown flesh around the seeds. Many European pears ripen from the inside outward, so the core can move past peak quality before the peel looks obviously bad.
UC Davis describes core breakdown as a senescent disorder: fruit held too long can develop brown, soft tissue in and around the core. Advanced maturity, delayed cooling, and extended storage increase the likelihood.
A little brown does not always mean rot
If the browning is limited, the remaining flesh has a normal texture and sweet pear aroma, the fruit may simply be very ripe. Trim the unappealing section and eat the rest immediately rather than storing it again.
An overripe but otherwise sound pear is often better in sauce, puree, oatmeal, or baking than as crisp slices.
Color alone is not enough because variety and storage history can change the appearance of the core. A light tan or brown area that stays firm is very different from tissue that is wet, collapsing, or sour-smelling. The best decision uses several clues together: how large the area is, whether the flesh still holds its shape, whether liquid is seeping out, and whether the aroma still smells like fresh pear.
When the center is actually breaking down
Core breakdown can progress until brown tissue becomes very soft and separates easily from healthier flesh. UC Davis also describes watery breakdown, where affected pear tissue loses structure, becomes water-soaked, and may release juice when cut.
If the inside is watery, slimy, collapsing, fermented-smelling, moldy, or leaking from deteriorated tissue, discard the pear. At that point the issue is no longer just a cosmetic brown patch.
A bruise can also create a localized brown area under the peel or near an impact point. If that damage is dry, limited, and surrounded by firm normal-smelling flesh, trimming it generously is different from trying to rescue a pear whose core is broadly soft and water-soaked.
Texture draws the practical line

The table is useful as a shortcut, but texture usually gives the clearest signal. Ripening makes pear flesh tender; advanced breakdown makes it lose cohesion. Flesh that smears into a wet paste, releases separate liquid, or has an alcoholic or sour odor has moved beyond ordinary ripeness.
Extent matters too. A small unattractive spot in an otherwise firm pear is not the same as a damaged core that occupies much of the fruit. The larger the altered area and the less sound flesh remains around it, the less sensible trimming becomes.
Why the peel can be misleading
European pears are commonly harvested firm and finish ripening after harvest. The exterior can therefore remain fairly attractive while internal tissue advances faster, especially after long storage. That is why peel color and firmness at the widest part of the fruit do not tell the whole story.
Before cutting, gentle pressure near the neck or stem end is often more useful than squeezing the whole pear. Slight give can indicate eating ripeness. If several areas feel very soft, use the pear promptly and check the center when you cut it.
Refrigeration slows further ripening once a pear reaches the stage you want, but it cannot reverse tissue that has already started to break down. If you buy several pears, ripening a few at room temperature and refrigerating the ripe ones can help stagger their use.
How to use a very ripe but still sound pear
A soft, sweet pear with no spoilage signs still has plenty of uses. Sauce, puree, oatmeal, muffins, quick breads, or smoothies are more forgiving of tender texture than a fruit plate or salad. The point is to use the fruit before overripeness progresses into watery collapse or abnormal odors.
Browning can begin as a sign that a pear has gone too far in ripening; loss of structure, liquid, and off odor show that the problem has progressed. Cutting the fruit in half tells you much more than the peel alone.
