Cocoa butter is not a chocolate-flavored spread. It is the natural fat inside the cocoa bean. When cocoa mass is pressed to make cocoa powder, some of that fat is separated as cocoa butter.
It is also central to chocolate’s texture: firm at room temperature, yet able to melt rapidly near body temperature.
What cocoa butter contains
The USDA reference for cocoa butter contains 100 g fat and about 884 calories per 100 g, with essentially no protein, carbohydrate, or fiber. Nutritionally it behaves like a pure fat, but its fatty-acid pattern is distinctive.

The rows do not total exactly 100 g because total fat includes additional lipid fractions and minor components beyond those broad fatty-acid sums.
Three fatty acids dominate
The largest individual fats are stearic acid at about 33.2 g/100 g, oleic acid at about 32.6 g, and palmitic acid at about 25.4 g.
Together those three account for more than 90% of cocoa butter’s weight in the reference. Exact proportions shift somewhat with cocoa variety, climate, and growing region.
Why it is solid despite so much oleic acid
Chocolate texture depends not only on which fatty acids are present but also on how they are arranged into triglycerides and crystals. Cocoa butter can crystallize in several forms.
Tempering encourages a stable form that gives finished chocolate gloss, a clean snap, and controlled melting. Heat cycling or poor storage can reorganize those crystals and contribute to fat bloom.
What a practical amount looks like
Ten grams of cocoa butter provides about 88 calories and 6 g saturated fat. In a chocolate bar, the final amount depends on how much cocoa butter is combined with cocoa mass, cocoa powder, sugar, and any other ingredients.
That is why cacao percentage alone cannot tell you saturated fat. Two 70% bars can distribute their cocoa-derived ingredients differently.
Bottom line
Cocoa butter is the bean’s own fat, dominated by stearic, oleic, and palmitic acids. Chemically it is mostly saturated fat, with roughly one-third monounsaturated fat. The same profile that matters nutritionally also explains much of chocolate’s unusual melting and crystallization behavior.
In chocolate, crystal structure matters as much as fatty-acid composition
Cocoa butter can crystallize in several forms, and that physical behavior is central to good chocolate. Proper tempering encourages a stable crystal form that gives a glossy surface, a clean snap, and a quick melt in the mouth. That is why cocoa butter is more than a calorie source: it is one of the ingredients that controls how a chocolate bar feels and breaks.
Temperature swings during storage can disturb that crystal structure. Fat may migrate and recrystallize on the surface as a pale, streaky coating known as fat bloom. It is generally a quality defect rather than mold, but the chocolate may look dull and feel less smooth.
It is not interchangeable with butter, olive oil, or coconut oil
Cocoa butter is firm at ordinary room temperature yet melts readily near body temperature. Dairy butter contains water and milk solids, olive oil stays liquid, and coconut fat has a different fatty-acid profile and melting pattern. Swapping one for another can change hardness, emulsion stability, and mouthfeel even when the total grams of fat are similar.
That difference is especially noticeable in coatings, ganache-style fillings, and confectionery where the fat creates structure. For everyday nutrition, however, the practical question is still portion size: cocoa butter remains an energy-dense fat even though its physical properties are unusually useful.
The ingredient list tells you whether you are looking at food-grade cocoa butter
Chocolate labels can show whether cocoa butter is the main added fat or whether the formulation includes other permitted vegetable fats. Cosmetic cocoa butter is a separate category; a balm or skin product should never be treated as edible simply because cocoa butter appears on the package.
When cocoa butter is eaten as part of chocolate, the whole product matters more than the isolated fat. Cocoa percentage, added sugar, serving size, and other ingredients shape the nutritional picture. A small amount can deliver the characteristic texture efficiently, while large portions still add substantial energy.
Home bakers should also distinguish pure cocoa butter from white chocolate. White chocolate contains cocoa butter, but it also usually contains sugar and milk solids, so it is not an equivalent source of pure fat. If a recipe uses cocoa butter to adjust flow or firmness, replacing it with white chocolate changes sweetness and the ratio of solids as well as the fat.
