Evaporated milk and sweetened condensed milk often sit near each other on a supermarket shelf and come in similar cans, which makes the names easy to confuse. They are not direct substitutes. Evaporated milk is concentrated milk without the massive sugar addition that defines sweetened condensed milk. Condensed milk combines milk solids with so much sugar that it becomes thick, glossy and dessert-like. Swapping one cup for the other can completely change a recipe.
Both start by removing water from milk
Heating under controlled conditions removes a large share of the water in fluid milk, concentrating lactose, protein, minerals and milkfat. Evaporated milk is then canned and heat processed, giving it a cooked dairy flavor and a body much richer than ordinary milk. Depending on fat level, it can be whole, low-fat or fat-free.
Sweetened condensed milk also begins with concentrated milk but includes a large addition of sugar. The sugar is not a minor flavoring; it becomes a major structural component of the product. This is why condensed milk pours slowly and can form thick ribbons even at room temperature.

Evaporated milk contains the lactose naturally present in milk but generally no comparable load of added sucrose. Sweetened condensed milk belongs mainly in recipes that need both milk and substantial sweetness. It works in key lime-style pies, brigadeiro, dulce de leche preparations, Vietnamese-style coffee and many chilled desserts. The sugar is part of the recipe architecture, not an optional extra.
A substitute requires reformulating, not a 1:1 swap
If a recipe calls for condensed milk and you only have evaporated milk, you would need to add a large amount of sugar and consider whether the final solids and thickness match. If a savory recipe calls for evaporated milk and you use condensed milk, removing that sugar afterward is impossible.
There are recipes for homemade versions of both products, but they recreate different targets. Read the full can name: “evaporated milk” and “sweetened condensed milk” are distinct categories. In some countries the word condensed may be used differently in everyday speech, so the ingredient list is the safest check.
The label gives a fast reality check
Look at total sugars and added sugars where they are declared, then compare calories per 100 grams or per common serving. Evaporated milk will resemble concentrated dairy; sweetened condensed milk will look more like a sugar-rich confection with dairy protein and minerals included.
The shortcut is simple: evaporated milk means water removed; sweetened condensed milk means water removed plus a very large sugar addition. That explains nearly every practical difference—taste, calorie density, viscosity and which recipes can use the product successfully.
