Why does dry-cured ham darken after it is cut?
Freshly cut dry-cured ham can darken because a new surface is exposed to oxygen and light and begins losing moisture. Red meat pigments oxidize toward browner forms. Moderate color change by itself is not proof of spoilage; odor, texture, abnormal mold and storage history matter too.
