The nutrition gap between fresh and aged cheese makes more sense when you think about water. As cheese loses moisture during aging, protein, fat, calcium, sodium, and calories become more concentrated in every 100 grams. Aging is not creating those nutrients from nothing; it is leaving less water to dilute the solids.

These are broad ranges, not definitions. Low-fat cottage-style cheeses can be far lower, and individual aged cheeses can fall outside them. The package label is the best source for a specific product. Use the categories to understand the pattern, then use the label to make an actual purchase comparison.
Why aged cheese has more protein per 100 g
If a cheese moves from roughly 60% water to closer to 35% water, 100 g of the finished cheese contains much more dry matter. A shift from 15 g to 27 g protein/100 g does not mean aging created 12 g protein; much of the change comes from water loss.
The same idea explains why a fresh cheese can look modest on a per-100-g label without being a poor protein food. People may eat a larger portion of a high-moisture cheese, while strongly flavored aged cheese is often used in smaller amounts. Concentration and serving size answer different questions.
The same logic explains calories
Fat is energy-dense. An aged cheese with 32 g fat per 100 g contains about 288 calories from fat alone, while a fresh cheese with 14 g fat contains about 126 calories from fat. That difference helps explain why aged cheese often approaches 400 calories/100 g.
This does not make fresh cheese calorie-free or aged cheese automatically excessive. It tells you that equal weights have different energy density. One ounce of a strong aged cheese and a half-cup or larger portion of fresh cheese can therefore produce a much narrower calorie difference than the 100-g table suggests.
Calcium becomes concentrated too
Calcium is part of the cheese matrix and can become more concentrated as moisture falls. Many hard aged cheeses exceed 700 mg/100 g while fresh cheeses often provide several hundred milligrams. Actual serving size matters because people may eat a smaller weight of an intensely flavored aged cheese.
Use the per-100-g value to understand concentration and the serving value to understand your meal. A cheese with twice as much calcium per 100 g does not automatically provide twice as much at dinner if your serving is half the weight.
Sodium reflects both salting and water loss
Aged cheese is usually salted during production and then loses water, both of which can increase sodium concentration. But recipes vary enough that two cheeses with similar aging can have very different sodium labels.
If the rest of a meal already contains deli meat, olives, crackers, sauces, or other salty foods, the specific sodium number may matter more than the broad “fresh versus aged” category. The process predicts a tendency; the Nutrition Facts panel gives you the product-level answer.
What about lactose?
Well-aged cheeses often contain very little lactose because whey removal carries away lactose and microbes ferment much of what remains. That does not make aged cheese dairy-free, and it does not make it appropriate for a milk-protein allergy.
Lactose intolerance and milk-protein allergy are different issues. Someone who tolerates a low-lactose aged cheese may still need to avoid dairy completely for an allergy. The degree of aging should not be used as a shortcut for medical suitability.
Serving size changes the calorie comparison
One ounce (28 g) of a cheese at 400 calories/100 g provides about 112 calories. A 100 g serving of a fresh cheese at 200 calories/100 g provides 200 calories. “Higher per 100 g” is not the same thing as “more calories in the amount you eat.”
The same applies to protein, calcium, fat, and sodium. When choosing between two products, compare equal weights first to understand composition, then translate the numbers into the amount you normally put on a sandwich, salad, snack plate, or recipe.
The useful takeaway
Aged cheese is a more concentrated food. Per 100 g it usually provides more protein, fat, calcium, sodium, and calories; fresh cheese contains more water and tends to be less energy-dense.
There is no universal winner. Fresh cheese can provide more volume for fewer calories, while aged cheese can deliver strong flavor and concentrated nutrients in a small portion. The most useful comparison combines the label with the serving you actually eat.
