Whole grains do differ in protein, but the gaps are smaller than a rigid ranking can make them look. Dry whole wheats and spelt often provide about 14–15 g protein per 100 g; oats and barley sit close behind; brown rice is closer to 7–8 g. The comparison only works when every grain is measured in the same state.

The exact first place should not be read to the decimal. Variety, moisture, and database entry can shift the numbers. The stable pattern is more useful: wheat, spelt, oats, and barley form a relatively high group, while brown rice contains about half as much protein as the most concentrated wheats by dry weight.
Dry weight is a composition tool, not a normal serving. Cooking changes the concentration dramatically.
Cooking can cut the per-100-g number to a fraction
The grain has not suddenly lost most of its protein; it has absorbed water and become heavier. Dry oats with more than 13 g protein per 100 g can turn into porridge with only a few grams per 100 g because the prepared food contains so much water.
The same principle applies to rice, barley, and cooked wheat berries. Compare cooked with cooked when you want a plate-level answer and dry with dry when you want to compare the grain itself.
The finished dish can also change the protein total far more than the grain ranking. Oatmeal made with milk or yogurt will contain more protein than oats cooked in water, and brown rice served with beans becomes a different meal than rice alone.
More protein does not automatically mean better protein
Cereal grains tend to be relatively low in lysine. They contain essential amino acids, but their pattern is not identical to eggs, dairy, meat, fish, or some plant proteins such as soy.
That does not mean incomplete proteins must be combined at every meal. A varied diet containing grains, legumes, nuts, seeds, and other protein foods across the day can supply the required amino acids.
Total amount still matters. A grain that ranks slightly higher for protein is not automatically a major protein source if the serving only contributes six or seven grams.
What a realistic serving looks like
A 50 g dry serving of oats provides about 6.5 g protein. Fifty grams of a whole wheat at 14–15% protein would provide roughly 7–7.5 g. The practical gap is small.
If you are trying to build a meal with 25–35 g protein, choosing oats instead of barley rarely solves the problem by itself. The main protein food—milk or yogurt, beans, tofu, eggs, fish, or meat—has much more impact.
Small differences can still add up when a grain is eaten frequently, but protein is only one reason to choose it. Fiber, taste, cooking time, price, gluten tolerance, and the rest of the meal may matter more in everyday use.
What about quinoa?
Dry quinoa is around 14 g protein per 100 g, but it is not included here because botanically it is a pseudocereal. It belongs in a culinary comparison, but not in a ranking specifically limited to true cereal grains.
Amaranth and buckwheat raise the same issue. They behave like grains in the kitchen but are not cereal grasses. They can still be useful alternatives when the practical question is which starch base contributes more protein.
Which whole grain should you choose for protein?
Whole wheat, spelt, and oats are among the most concentrated, but the gaps are too small to choose on protein alone. Fiber, gluten, texture, cooking method, and the protein food served with the grain usually change the meal more than one or two grams per 100 g dry.
The ranking is useful for orientation; serving size and what you pair with the grain determine how much protein actually reaches the plate.
