The goal is usually to hold the potatoes, not to store them indefinitely.

Refrigeration matters because cut potatoes are fresh produce with exposed, damaged tissue. A bowl left on the counter may look fine in water while spending hours at a temperature that favors microbial growth. If the potatoes need to wait until the next day, keep the bowl covered in the refrigerator. For longer delays, quality usually declines enough that cutting closer to cooking is preferable.

Before frying or roasting, drain thoroughly and dry the pieces well. Surface water interferes with browning and can cause hot oil to splatter. For mashed or boiled potatoes, drying is less critical, but replacing cloudy holding water with fresh cooking water can give more predictable starch behavior. Cloudiness alone is usually released starch, not a sign that the potatoes have spoiled.

Discard potatoes that develop a sour or fermented smell, slimy surfaces, unusual softness, or other clear spoilage signs. Water can hide discoloration, so look and smell after draining rather than judging only through the bowl. A short refrigerated soak is a useful kitchen technique; it is not a preservation method comparable with freezing or canning. Plan around hours rather than many days.

The potato variety and final recipe should guide whether soaking is useful at all. Waxy potatoes destined for a salad often need no holding soak if they can be cooked soon, whereas starchy potatoes for fries may benefit from rinsing or soaking to remove surface starch. For gratins, excessive washing can remove starch that would otherwise help thicken the sauce. The technique should solve a specific problem rather than become an automatic step.

If you need to prepare ahead for a large meal, keep pieces similar in size and fully submerged so exposed corners do not brown. Labeling the container with the preparation time also avoids losing track of how long they have been held. Good mise en place is partly about time control.

When the cooking time arrives, treat the soak as preparation rather than proof of freshness. Drain, inspect, and cook promptly. If plans change again, refrigerate rather than restarting the clock with a fresh bowl of water.

Cloudy water is usually starch

A mild white haze is normal because starch from the cut surfaces moves into the water. Sour odors, sliminess, unusual foam, or fermentation-like signs are different and are reasons to discard the potatoes.
