Kefir is acidic and fermented, but that does not make it immune to spoilage. Refrigeration slows microbial activity; it does not stop it completely. That is why the answer depends on whether you bought the kefir or fermented it yourself.

For commercial kefir, the label comes first

When the container is unopened and has stayed refrigerated, use the manufacturer’s date as the primary guide. After opening, follow any shorter use-within period printed on the package.

Store kefir at 40°F (4°C) or below in a consistently cold part of the refrigerator rather than the door, where temperatures swing more often.

Homemade kefir varies more

Culture strength, fermentation time, temperature, container cleanliness, and handling differ from kitchen to kitchen, so a universal number would give false precision.

Once the flavor is where you want it, removing the grains and chilling the kefir slows fermentation. It may still become more tart and separate over time.

Separation is not the same as mold

A yellowish whey layer with a thicker white portion can be a normal acid-driven separation and often mixes back together. Fuzzy growth, unusual colors, or a clearly rotten odor are different and should trigger disposal.

Do not rescue a moldy batch

If mold or suspicious surface growth is present, do not scoop off the top and keep the rest. A fermented dairy product with visible contamination is not worth testing by taste.

Time matters, but cold storage and clean handling matter just as much.

Use storage history and spoilage signs instead of one universal day count

Commercial kefir has a controlled manufacturing process, sealed packaging, and a printed date, so the package instructions are the first reference. After opening, keep it refrigerated, close the container promptly, and avoid drinking directly from the bottle if you want to minimize contamination. Some products remain acceptable for several days after opening, but formulation and local labeling differ enough that one universal number is less useful than the manufacturer’s guidance.

Homemade kefir varies more because fermentation time, temperature, milk, starter activity, and hygiene differ from kitchen to kitchen. Once the flavor is where you want it, refrigeration slows further acidification. The drink may become more sour and separate into curds and whey over time. Separation alone is not necessarily spoilage; gentle shaking can often recombine a normal batch.

Visible fuzzy mold, unusual colored growth, a rotten rather than pleasantly sour odor, or a container that was left warm for an uncertain period are reasons to discard the kefir. Do not skim mold from the surface and keep the rest. If the product has been repeatedly warmed and cooled, the printed date becomes less reassuring because storage history has changed.

Keep homemade batches in clean containers, use clean utensils, and make quantities you can finish while quality is good. The useful rule is to combine refrigeration, the product’s normal smell and appearance, and its actual handling history instead of relying on acidity as if fermentation made the drink spoil-proof.

For homemade kefir, keeping notes for a few batches can be more useful than borrowing someone else’s exact timetable. Record how long you ferment, the room temperature, the amount of grains or starter, and how the finished kefir smells and tastes when it is good. That creates a personal baseline, making unusual changes easier to recognize later.

Remember that continued souring is not the same as unlimited safety. A very tart batch may simply have fermented longer, but visible contamination still overrides acidity. Likewise, a mild commercial kefir that has been mishandled should not be trusted just because it does not smell extremely bad. Fermentation is one preservation hurdle, not a substitute for refrigeration and clean handling.

Commercial flavored kefir adds another variable: sugar. The storage rules are similar to plain kefir, but the nutrition profile can differ substantially because fruit preparations or added sweeteners raise carbohydrate and calories. If you drink kefir regularly for its protein, calcium, or cultures, compare plain and flavored labels separately rather than assuming fermentation makes their nutrition identical.

If the bottle smells and looks normal but tastes noticeably sharper than when first opened, that may reflect continued fermentation rather than spoilage. Quality can change before safety does. Use your normal product as the comparison point, and discard when the change is accompanied by abnormal growth, rotten odor, or poor storage history.
