A coffee bean is the seed of the coffee plant’s fruit, not a botanical bean. English kept the word bean because the dried seeds resemble small beans, but coffee plants belong to the Rubiaceae family rather than the legume family Fabaceae.
Before coffee becomes a hard brown roasted bean, the seed sits inside a fleshy fruit commonly called a coffee cherry. Post-harvest processing removes the skin, pulp, mucilage, and protective layers around the seed, producing green coffee for roasting.
Coffee begins as a fruit on a flowering plant
After flowering, a coffee tree develops small fruits that usually ripen from green to red or yellow depending on cultivar. “Cherry” is a convenient appearance-based name; coffee is not a true cherry in the Prunus sense.
Beneath the outer skin are fruit flesh and mucilage. At the center are usually two seeds positioned face to face. Those seeds are the units that eventually become the familiar coffee beans of trade.
The Specialty Coffee Association treats coffee-cherry anatomy as foundational production knowledge because harvesting and processing decisions are largely about getting those seeds out of ripe fruit, drying them safely, and preserving quality.
Why most coffee cherries produce two beans
Most coffee fruit develops two seeds. Because they grow pressed against each other, each seed usually has a flatter inner face and a rounded outer face. That shape remains obvious after drying and roasting.
Occasionally only one seed develops into a rounded form occupying more of the fruit. This is called a peaberry. It is not a separate coffee species; it is a developmental variation that can occur within a crop.
Other fruit can contain malformed or incomplete seeds. Milling, grading, and sorting remove many physical defects before green coffee reaches a roaster.
“Bean” is useful food language, not a plant-family diagnosis
True beans in the botanical and agricultural sense are associated with legumes whose seeds develop in pods. Coffee uses an entirely different fruit and belongs to a different plant family.
The Specialty Coffee Association notes that saying coffee beans are seeds is technically correct, while the history of calling seed-like foods “beans” is much older and broader than modern taxonomy. Common names often come from appearance and use.
The same applies to “coffee grain” in some languages: it is a market term rather than evidence that coffee is a cereal. Wheat grain is a dry cereal fruit; a coffee bean is a seed extracted from a fleshy fruit.
The word “bean” became natural because processed coffee seeds resemble small beans in size and shape, but the plant itself gives the clearest correction. Coffee belongs to the Rubiaceae family, not the legume family that contains true beans, peas, and lentils. Its seeds develop inside a fleshy coffee fruit usually called a cherry. The seed changes dramatically between cherry and cup
Washed, natural, and honey processing handle the fruit layers around coffee seeds differently. After sufficient drying and milling, green coffee remains: pale, dense seeds ready for export and roasting.
Roasting changes color, size, brittleness, moisture, and chemistry. Heat generates the aromas people recognize as coffee and creates a porous structure that can be ground and extracted. Those transformations do not change which plant part originally entered the roaster.
The clean conclusion is: a coffee bean is a coffee seed taken from a coffee cherry; it is neither a botanical bean nor a cereal grain. Most cherries contribute two seeds, and the word bean survives because it is a useful traditional name for the dry seed that the coffee trade handles.
