Maca is often encountered as a powder next to protein blends and supplements, but it begins as a crop grown in the Peruvian Andes. The edible part is an enlarged underground hypocotyl/root structure from a plant related to other members of the cabbage family.
Nutritionally, dried maca is primarily a starchy plant food, not a concentrated protein powder or a high-fat seed.
What is in dry maca?
Reviews of different maca samples report broad ranges of roughly 55–73% carbohydrate, 8.9–21% protein, 8.2–25.6% fiber and 0.6–2.2% fat.
The range is wide because cultivar, color, growing location, climate and analytical method all matter. There is no single composition that describes every jar of maca powder.
Translate that into a spoonful
Using a classic reference composition of about 59% carbohydrate, 10.2% protein, 8.5% fiber and 2.2% fat, a 5 g serving works out to roughly 3 g carbohydrate, 0.5 g protein, 0.4 g fiber and 0.1 g fat.
That is the practical point: an ingredient can look concentrated per 100 g and still make only a modest nutritional contribution when used by the teaspoon.
What about minerals?
Maca samples contain minerals including calcium, iron, copper, zinc, potassium and magnesium, but reported concentrations vary considerably by origin. If you are buying it for a specific mineral, a product-specific analysis is more useful than a generic internet value.
‘Gelatinized’ maca does not mean added gelatin
Gelatinization refers to cooking and disrupting the starch with heat and moisture before drying. It does not mean animal gelatin has been added. The process changes starch behavior and can alter the concentration of some components.
What about energy, hormones or libido claims?
Maca contains secondary compounds such as macamides and glucosinolates that are being studied. Their presence is not proof that a typical spoonful produces a specific clinical effect.
Systematic reviews of human trials have generally found a small evidence base for many popular claims. From a nutrition standpoint, the clearest description remains simple: maca is a mostly carbohydrate-rich plant powder, with some protein and fiber, usually consumed in small amounts.
Use maca as a food ingredient, not as a shortcut to a nutrition goal
Maca powder is concentrated because the root has been dried, so its nutrition label can look impressive per 100 grams. In practice, however, most people use one or two spoonfuls rather than a 100-gram serving. That changes the interpretation. A small amount can add carbohydrate, a little fiber and some minerals, but it will not transform a smoothie or breakfast into a high-protein or mineral-rich meal by itself. The rest of the recipe still matters much more: milk or soy drink can supply protein, oats can add whole-grain carbohydrate and fiber, and nuts or seeds can contribute fat and additional minerals.
The flavor is another reason to treat maca as an ingredient rather than a supplement-like dose. Its malty, earthy taste works in cocoa drinks, porridge, yogurt, pancakes and smoothies, but large amounts can dominate the recipe. “Gelatinized” maca has been processed with heat and moisture to remove much of the starch; the term describes the treatment of the starch and does not mean animal gelatin has been added. Because products vary in processing and serving instructions, the label is the best guide for how the manufacturer intends the powder to be used.
Claims about energy, libido, fertility or hormone balance deserve a different standard of evidence from basic nutrition facts. Small studies do not justify assuming that every commercial maca product will produce a noticeable effect, and food composition cannot prove a therapeutic benefit. Anyone pregnant, breastfeeding, taking medication or considering maca for a health condition should discuss concentrated use with an appropriate healthcare professional. For ordinary culinary use, the simpler approach is enough: use a modest amount for flavor and variety, and judge the nutritional quality of the whole meal rather than expecting the powder to do the work on its own.
Buying from a reputable manufacturer also matters because powders can vary in origin and processing. A clear ingredient list, batch information and sensible serving guidance are more useful signs of quality than dramatic promises about performance or hormones on the front of the package.
