Maple syrup is diluted with its own water, while granulated sugar is essentially dry sucrose. So by weight, granulated sugar clearly contains more sugar. By the tablespoon, the gap becomes much smaller because a spoonful of syrup weighs more.

Roughly one-third of maple syrup is water, which lowers both sugar and calorie concentration. It is still a concentrated sweetener, not a low-sugar food.
A tablespoon nearly erases the calorie gap
A tablespoon of maple syrup weighs about 20 grams and commonly supplies around 50–55 calories with roughly 12–13 grams of sugar. A level tablespoon of granulated sugar weighs closer to 12–13 grams and provides roughly 48–50 calories and about the same number of grams of sugar.
That is why both statements can be true: syrup has much less sugar per 100 grams, yet a spoonful used at the table can deliver a very similar sugar load.
Maple’s micronutrients do not cancel its added sugar
Pure maple syrup contains small amounts of manganese, riboflavin, and other compounds that refined white sugar largely lacks. Those extras can distinguish the foods, but nutritionally maple syrup still functions mainly as an added-sugar sweetener.
Baking swaps change the liquid balance
Replacing dry sugar with syrup also adds water and maple flavor. Cakes and cookies may need liquid adjustments, and browning can change, so a cup-for-cup substitution is not only a nutrition question.
If the comparison is per gram, granulated sugar wins by a wide margin. If it is one tablespoon of each, they are much closer than the liquid-versus-crystal appearance suggests.
Maple syrup is a different ingredient, but it is still an added sugar
Maple syrup can bring flavor and a small amount of minerals that plain granulated sugar does not provide, yet those differences should not obscure the main nutritional fact: both are concentrated sweeteners. If you add either one to coffee, porridge, pancakes or a dessert, the sugar counts as added sugar rather than as a meaningful source of micronutrients. The manganese or riboflavin present in maple syrup can be measurable, but you would need to consume a relatively large amount to obtain much of your daily nutrition from it, and that would also mean consuming a large dose of sugar.
Portion size explains why comparisons sometimes look contradictory. Per 100 grams, table sugar is almost entirely sucrose, whereas maple syrup contains a substantial amount of water. Per tablespoon, however, the gap narrows because maple syrup is dense and a tablespoon still contains a meaningful amount of sugar. If someone switches from one tablespoon of sugar to several tablespoons of syrup because the syrup seems “healthier,” total sugar intake can actually rise. The useful comparison is therefore the amount you genuinely use in the same eating occasion, not just a laboratory weight.
In baking, the substitution is also technical. Maple syrup adds liquid, acidity, flavor and browning characteristics, while granulated sugar provides dry bulk and influences texture. Replacing sugar with syrup often requires reducing another liquid and may change spread, tenderness and cooking time. Recipes designed for maple syrup usually work better than a blind one-for-one swap. If your goal is to reduce added sugar, the most effective strategy is to reduce the overall sweetness gradually, regardless of which sweetener is chosen, and use maple syrup when you specifically want its distinctive flavor rather than because it is nutritionally “free.”
The same principle applies to other “natural” sweeteners such as honey, agave or coconut sugar. Their flavors and minor nutrients differ, but the body still receives a concentrated source of sugars. Choosing among them is primarily a question of flavor, recipe function, cost and portion rather than finding a version that stops counting as added sugar.
For beverages, this can be especially easy to overlook because liquids do not create much visual volume. Measuring the sweetener for a week can show whether the habitual dose is larger than assumed and makes gradual reductions easier to judge.
A smaller plate or spoon can also help when syrup is used at the table. Because it pours quickly, people often add more than they intended before tasting the food. Starting with less and adding only if needed is an easy way to keep the flavor while controlling the total amount of added sugar.
