A peach can feel ripe on the outside yet be dry, mealy, or almost woolly when cut. That texture is often associated with a physiological disorder called internal breakdown or chilling injury. Under certain combinations of cold-storage temperature and time, the fruit’s later ripening does not remodel its cell walls normally, so juice is not released the way it should be. The flesh may become soft but strangely dry or grainy. This is not the same process as microbial rot. If there is no mold, fermented odor, slime, leaking decay, or rotten tissue, mealiness is primarily a quality defect, even though it can make the peach unpleasant to eat fresh.
Cold-storage history can lead to woolly flesh
Peaches and nectarines are unusually sensitive to particular storage conditions. UC Davis lists mealiness, woolliness, flavor loss, reduced juiciness, and internal browning among symptoms of internal breakdown or chilling injury. The defect may remain hidden while a peach is still firm in storage and become obvious only after the fruit softens at the end of ripening.
That explains the frustrating peach that smells aromatic and yields to gentle pressure but feels like damp cotton or meal in the mouth. The flesh has changed structurally and does not release juice normally when chewed. It does not necessarily mean the fruit was harvested rotten or became contaminated in your kitchen. Cultivar, harvest maturity, and the temperatures encountered during distribution all influence susceptibility.
Mealiness does not look exactly like decay
Mealy flesh can be pale, relatively uniform, soft, and dry-looking. A genuinely decaying peach is more likely to develop very wet, collapsing brown areas, translucent breakdown, leaking juice, fuzzy growth near a wound or stem, or a sour and alcoholic smell. Internal browning can also occur as part of physiological chilling injury, so color by itself does not always identify the cause; texture, odor, leakage, and visible fungal growth provide a better overall picture.
If a peach is moldy, trimming a thin layer away is not a good strategy. Peaches are soft, high-moisture fruit in which fungal growth can extend beneath the visible area. If the only problem is mealiness and the fruit otherwise looks and smells normal, that is a different situation. The issue is usually eating quality rather than a reason to assume the peach is unsafe.
Extra ripening usually does not restore the lost juiciness
A peach that is simply firm and underripe can soften at room temperature. A peach that is already soft and has developed woolly internal tissue will not rebuild its original juicy texture by sitting another day or two. Continuing to hold it warm may instead move it from a physiological quality defect into ordinary overripeness and eventually spoilage.
If the flavor is normal and there are no spoilage signs, the fruit can still be useful where texture matters less: puree, cooked sauce, smoothie, compote, or baking. Heat does not reverse chilling injury, but it changes the eating experience enough that a disappointing raw peach may still be useful. If the fruit also tastes fermented or smells clearly off, discard it rather than trying to rescue it in a recipe.
You can reduce risk at home, but not control the whole supply chain
You cannot see a peach’s complete storage history at the store. You can, however, choose fruit without leaking bruises, active mold, or severe damage and select firmness based on when you plan to eat it. A very firm peach can finish ripening at room temperature; once it reaches the texture you want, refrigeration can buy some time. Long holding simply because the refrigerator seems to pause ripening is not always ideal for a fruit prone to chilling-related disorders.
The key distinction is that “mealy” describes texture, not a safety diagnosis. A dry woolly peach may be the result of a postharvest disorder and can be edible despite poor quality. Mold, slime, leaking rot, or a strong fermented odor are different warning signs. Recognizing the difference explains how a peach that looked perfect from the outside can fail dramatically inside without necessarily being rotten.
Kitchen tricks cannot reverse a woolly cell structure
Soaking the peach in water, putting it in a paper bag, or briefly warming it will not redistribute juice through damaged tissue the way a normal peach ripens. Ripening tricks can help an underripe fruit soften, but they cannot undo the structural changes that produced mealiness. If you use the peach, change the format instead: puree it, cook it with spices, or combine it with juicier fruit rather than expecting slices to regain their original succulent bite.
