Choosing oil for a very hot skillet is not just a matter of finding the highest number on a smoke-point chart. The oil also has to withstand oxidation, moisture from food and sustained heating. Oils rich in oleic acid—especially olive oil and high-oleic sunflower—stand out on that broader test.
What “handles heat” actually means
Frying drives thermoxidation, hydrolysis and polymerization. Fatty acids with more double bonds have more chemically vulnerable sites, so highly polyunsaturated oils generally oxidize faster than monounsaturated-rich oils under comparable conditions.
Smoke point is still operationally useful: continuous visible smoke means the oil is overheating. But two oils with similar smoke points can deteriorate at very different rates during prolonged heating.
Strong high-heat options

Product formulation still matters. “High oleic” is not a small label detail; it can substantially change the oil’s chemistry.
Why olive oil performs well
A 2024 frying-oil review describes olive oil as particularly stable because of its high monounsaturated-fat content and antioxidant components. Comparative frying experiments have also found refined olive oil to deteriorate less than several refined seed oils.
Extra-virgin olive oil adds phenolic compounds, although some decline with repeated heating. Good stability does not make any oil immune to degradation.
High-oleic sunflower is a different oil from regular sunflower
Conventional sunflower can contain roughly 45–74% linoleic acid, whereas high-oleic varieties contain about 75–91% oleic acid. That shift substantially improves oxidative and thermal stability.
What about highly saturated oils?
Coconut and palm fats can be oxidation-resistant because they contain more saturated fat, but heat stability is not the only nutritional consideration. A stable frying medium is not automatically the best everyday dietary fat.
The practical shortlist
For high-heat sautéing and frying, olive oil, refined olive oil and high-oleic sunflower are especially strong choices. Pick among them for flavor, cost and cooking style, and control temperature rather than treating a high smoke point as permission to let the oil smoke.
Match the oil to the job instead of buying one “hottest” oil
Deep frying, stir-frying, searing, roasting, and shallow sautéing place different demands on oil. Refined avocado, refined olive oil, high-oleic sunflower, peanut oil, and other refined high-heat oils can all work well, but flavor, price, allergen considerations, and local availability may decide the best choice.
Extra-virgin olive oil can also handle many everyday cooking temperatures, especially sautéing and roasting. Its usefulness should not be judged only by the highest temperature printed in a smoke-point chart.
Repeated frying changes the ranking
For a one-time sear, smoke point and flavor may dominate the decision. In a fryer used for repeated batches, oxidative stability becomes more important because the oil remains hot for longer and is repeatedly exposed to air, water, and food residues. High-oleic oils are popular in that setting because replacing some polyunsaturated fat with monounsaturated oleic acid generally improves heat stability.
Even a stable oil should be discarded when it becomes excessively dark, viscous, foamy, rancid-smelling, or begins smoking at a noticeably lower temperature than before.
Storage starts before the pan is heated
Light, heat, and oxygen age oil in the bottle. Keeping it tightly closed in a cool, dark place preserves the quality you are trying to protect during cooking. Buying a container size that you can finish in a reasonable time is often more useful than choosing a technically stable oil and then storing an open bottle beside the stove for months.
For most home kitchens, two or three oils are enough. A flavorful extra-virgin olive oil can cover dressings and much everyday cooking, while a neutral refined or high-oleic oil can handle situations where stronger heat or neutral flavor is useful. That approach is usually more practical than collecting many specialty oils with overlapping roles.
Do not confuse a neutral flavor with better heat resistance. Refining often raises smoke point, but the fatty-acid profile and oxidation stability still matter. Likewise, a strong-flavored oil is not automatically unsuitable for heat. The cooking method, duration, and whether the oil will be reused provide more information than color or flavor intensity alone.
