Pomegranate with brown or soft arils: can you save part of it?

A few localized brown or soft pomegranate arils may be removable if surrounding chambers are sound. Widespread wet browning, blackened arils, mold or musty odor means discard.

A pomegranate can contain a few brown or soft arils while most of the fruit still looks normal, but the pattern matters. Localized bruising, drying, or chilling injury can affect limited tissue, while mold and internal rot can spread through chambers. If only one small section is discolored and the neighboring arils are firm, translucent, fresh-smelling, and dry, discard the affected section generously and use the rest promptly. If browning is widespread, wet, musty, moldy, or blackened, discard the whole fruit.

Not every brown aril has the same cause

Pomegranate arils can darken from age, pressure, bruising, or internal physiological injury. UC Davis notes that chilling injury can cause pale arils and brown discoloration of the white membranes separating them. A single chamber may therefore look worse than another even when the rind seems acceptable.

Dry, slightly shriveled arils usually indicate water loss and declining quality. Soft wet arils are more concerning because tissue breakdown provides a better environment for decay. Compare color with texture: a dark but dry seed is different from a brown, mushy aril sitting in cloudy juice.

The fruit’s internal chambers can limit or conceal damage

Pomegranates are divided by membranes, so a localized bruise or small defect may remain concentrated in one compartment. If one chamber contains a few damaged arils but adjacent membranes are clean and the rest of the fruit smells normal, it may be reasonable to remove the entire affected section rather than discard every good aril.

That logic stops working when the membranes themselves are brown, slimy, moldy, or wet across multiple chambers. Once deterioration crosses compartments, the visual boundary is no longer trustworthy. Internal mold can also develop before the exterior gives a strong warning.

Blackened masses or mold mean the whole fruit should go

UC Davis describes heart rot in pomegranate, caused by fungi such as Alternaria and Aspergillus, in which internal arils can become blackened even while the skin looks only slightly abnormal. Gray mold can also invade from the calyx area. These are very different from one bruised seed.

If you find fuzzy growth, a black or gray mass of arils, musty odor, or broad wet decay, discard the pomegranate. Do not rinse the affected seeds and mix them with good ones. Soft, high-moisture produce can harbor mold beyond what is visible, and the fruit’s enclosed architecture makes the true extent hard to judge.

Use opened pomegranate promptly and keep arils refrigerated

Once removed from the rind, arils should be refrigerated in a clean covered container. Their exposed surfaces lose the protection of the intact fruit and can deteriorate faster. Discard stored arils if they develop slime, mold, sour fermentation, or widespread browning and softness.

The practical salvage rule is narrow: one small, dry, clearly localized damaged section may be removed if everything around it is sound. Multiple brown chambers, wet softness, blackened arils, mold, or off odor are reasons to discard the entire fruit. Pomegranate structure can isolate minor damage, but it can also hide internal disease.

When salvaging a genuinely localized section, use a clean spoon and avoid dragging juice from the brown chamber across the good arils. Transfer the sound arils to a clean container and refrigerate them rather than returning them to the opened rind. If you find additional soft brown seeds as you work, or the dividing membranes smell musty, stop salvaging. The discovery of several affected chambers changes the problem from isolated damage to likely internal deterioration.

Color can vary naturally among pomegranate cultivars, so pale or deep-red arils are not defects by themselves. The concern is a change within one fruit: brown mushiness, cloudy juice, or loss of normal translucency in a chamber that looks distinctly worse than its neighbors. If the fruit has been cut for several days, storage time adds another reason to be conservative, because exposed arils deteriorate faster than those protected by an intact rind.
