Raw vs Pasteurized Milk: Safety, Nutrition, and What Pasteurization Changes

The treatment targets microorganisms such as Salmonella, E. coli, Campylobacter, and Listeria that can cause serious disease. Pasteurization does not sterilize the milk, so refrigerated storage remains necessary. Its primary public-health purpose is not to make an old product last longer; it is to reduce the risk from pathogens that may be present even in fresh-looking milk. Shelf life then depends on the heat process, hygiene after treatment, packaging, and refrigeration.

Raw milk is not made safe by appearance, smell, or a trusted farm

A batch can contain harmful bacteria without obvious spoilage. Testing also has limits because contamination may be intermittent or unevenly distributed, and a negative sample does not prove that every portion is free of pathogens. Healthy animals can still shed organisms. Claims that a small farm, grass-fed herd, or careful milking system makes raw milk inherently pathogen-free therefore go beyond what hygiene can guarantee. Refrigeration slows bacterial growth but does not undo contamination that already occurred. Boiling raw milk at home can reduce microbial risk, but once you intentionally apply adequate heat you are no longer preserving the defining “raw” characteristic people sought.

The major nutrient profile survives pasteurization well

Protein, fat, lactose, calcium, phosphorus, and calories remain broadly similar after standard pasteurization. Heat changes the structure of some proteins and can reduce certain heat-sensitive vitamins to a degree, but milk is not a major source of every affected vitamin and the overall nutritional loss is modest. Pasteurization does not cause lactose intolerance: lactose remains in both raw and pasteurized milk. It also does not make milk safe for someone with milk-protein allergy because casein and whey proteins remain. Assertions that raw milk provides a unique nutritional benefit large enough to offset the microbial risk are not supported by the basic composition comparison.

Who faces the highest consequences from infection

Anyone can become ill from contaminated raw milk, but pregnancy, infancy and early childhood, older age, and weakened immunity can increase the chance of severe outcomes. Certain infections can lead to hospitalization, pregnancy complications, kidney injury, or other serious consequences. That changes the risk calculation: a preference for raw-milk flavor is not equivalent to a preference with only cosmetic downsides. If a person develops vomiting, diarrhea, fever, severe abdominal symptoms, or other illness after raw milk exposure—especially during pregnancy or in a high-risk individual—medical advice is appropriate.

Regulation and legal sale vary by state

Federal law prohibits the interstate sale of raw milk for direct human consumption, while intrastate rules vary across the United States. Some states allow retail sales, some limit sales to farms or herd-share arrangements, and others prohibit them. Legal availability should not be interpreted as a guarantee that raw milk is free of microbial hazards. For current purchase rules, consult the relevant state authority. Cheese and other products made from unpasteurized milk have their own regulatory frameworks and are not equivalent to drinking raw fluid milk.

Pasteurized milk is the lower-risk choice

For everyday drinking, pasteurized milk provides the nutritional components people usually seek from dairy while substantially reducing the pathogen risk that accompanies raw milk. Store it cold, observe package dates and handling instructions, and remember that pasteurization does not make opened milk shelf-stable. If flavor or local sourcing is the motivation for choosing raw milk, look for pasteurized products from local dairies rather than assuming that careful production can replace a validated pathogen-kill step.
