Roasted nuts taste stronger and crunch differently, but the nutritional change is usually much smaller than the flavor change. Roasting removes some water and affects heat-sensitive compounds; it does not erase protein, minerals, or most of the fat. The bigger practical distinction is often plain dry-roasted nuts versus products that also contain salt, oil, sugar, or coatings.

Protein is essentially tied. The 19-calorie difference and some of the higher fat concentration per 100 g largely reflect lower moisture: the USDA entries contain about 4.4 g water per 100 g raw almonds and about 2.4 g in the dry-roasted version.
Water loss can make nutrients look higher
When food loses moisture, 100 g contains proportionally more dry matter. Fat, calories, and some minerals can therefore look higher without heat having created anything. The same concentration effect appears in dried fruit and reduced sauces.
At a 1-ounce-like 30 g portion, the calorie difference is only about 6 calories: roughly 174 calories for raw almonds and 179 for the dry-roasted reference.
Protein and minerals are fairly stable
Total protein changes little, and minerals are not destroyed by heat in the way a heat-sensitive vitamin can be. Total fat also remains similar when no oil is added. What can change is oxidation: polyunsaturated fats are more vulnerable to heat and long storage than monounsaturated fats.
Some vitamins and plant compounds are more sensitive
Vitamin E and certain phenolic compounds can decline depending on the nut, temperature, and roasting time. There is no single percentage that applies to almonds, walnuts, pistachios, and every roasting process.
Salt can matter much more than roasting
The unsalted almond references contain only about 1–3 mg sodium per 100 g. A USDA entry for salted dry-roasted almonds is around 234 mg per 100 g. In that comparison, the meaningful change is unsalted versus salted, not raw versus roasted.
Added oil, honey, sugar, or chocolate makes the same point: you are no longer measuring roasting alone.
Roasting temperature and time matter more than the word “roasted” alone. Gentle dry roasting produces smaller changes than prolonged exposure to high heat, especially for delicate unsaturated fats and some heat-sensitive compounds. Commercial products can therefore differ even when both labels say roasted. The ingredient list and flavor profile may reveal more than the category name.
Oil-roasted nuts are another case. They do not necessarily absorb huge amounts of oil, but the added fat can raise calories modestly and change the fatty-acid profile depending on the oil used. Dry-roasted nuts avoid that variable. If the product is seasoned, sugar, salt, honey, or coatings can matter more nutritionally than the roasting process itself.
Storage becomes especially important after roasting because heat can accelerate oxidation and roasted aromas can fade. Keep nuts sealed, cool, and away from light; refrigeration or freezing can be useful for large quantities or warm kitchens. A stale, paint-like, bitter, or rancid smell is a stronger quality warning than whether the nuts began raw or roasted.
For routine eating, preference can guide the choice. Roasted nuts may be easier to enjoy and therefore easier to include consistently, while raw nuts offer a different texture and may preserve slightly more of some heat-sensitive compounds. Unsalted versions of either form keep the comparison focused on the nut itself.
Roasting can improve flavor through browning reactions, which is why many people prefer roasted nuts even when the nutrient differences are small. Better taste can increase adherence to a healthy snack pattern, but it can also encourage larger portions, especially when salt or sweet coatings are present.
If you roast nuts at home, moderate heat and close attention reduce burning. Dark, scorched surfaces signal more than a flavor problem because excessive heat can damage fats and create bitter compounds. Letting the nuts cool completely before sealing also prevents trapped steam from softening them.
Which should you choose?
Raw and unsalted dry-roasted nuts can both fit well. If you prefer roasted nuts, check ingredients and sodium before worrying that roasting has made the food broadly less nutritious. The additions often change the product more than the heat itself.
