This is why a recipe developed with one brand of kosher salt can taste noticeably saltier when the same volume of another salt is substituted without adjustment.

Brand matters especially with kosher salt because the category does not define one universal crystal shape. Diamond Crystal and Morton, two common U.S. brands, have visibly different flakes and different weights per teaspoon. A cook who measures by hand may adapt instinctively, but a written recipe needs a reference. When precision matters, grams remove the ambiguity completely because five grams remains five grams regardless of crystal size.

Iodized table salt adds another consideration: iodine fortification. In the United States, iodized salt is one dietary source of iodine, while many specialty sea salts and kosher salts are not iodized unless the label says so. Sea salt can contain trace minerals that affect color or flavor, but those traces do not create a meaningful sodium reduction when equal weights are compared. Choosing a specialty salt for texture or taste is different from choosing it as a low-sodium strategy.

Finishing salt is a separate use case from salting a pot of water. Large flakes can create bursts of salinity and crunch on tomatoes, cookies, roasted vegetables, or fish because they remain visible on the surface. Fine salt dissolves quickly and distributes more evenly through doughs, soups, and sauces. The best crystal therefore depends on whether you want even seasoning throughout the food or distinct crystals at the end.

For brines, bread, pickles, fermentation, and curing, use the exact salt quantity the tested formula calls for and favor weight when possible. A casual pinch in scrambled eggs can tolerate variation; a concentration-sensitive process may not. The core lesson is not that one salt is inherently stronger. It is that equal spoonfuls can contain unequal masses, and mass is what determines how much sodium chloride actually enters the food.

Taste as you cook when the recipe allows it. A volumetric conversion chart can get you close, but moisture, brand, flake shape, and how a spoon is filled still create variation. Weighing is the cleanest solution for precision; tasting is the practical safeguard for soups, sauces, vegetables, and other dishes that can be adjusted before serving. Nutrition labels can help with sodium, but even a label expressed per quarter teaspoon is tied to that product’s crystal size and packing. For bread dough, brines, pickles, or any formula where salt concentration matters, converting the recipe to grams removes that source of uncertainty.
