Mayonnaise is supposed to be a stable, glossy emulsion, so a watery layer or curdled appearance naturally raises concern. Separation can happen for a purely physical reason: freezing, repeated temperature swings, or mechanical breakdown can make oil droplets merge and release water. USDA specifically notes that emulsions such as mayonnaise separate and appear curdled after freezing. That is a quality problem. It is not, however, a reason to ignore storage history. Open commercial mayonnaise should be refrigerated, and homemade mayonnaise has a much shorter life.
How an emulsion can break without microbial spoilage
Mayonnaise contains oil dispersed through a water phase with egg-derived emulsifiers helping the droplets stay apart. Freezing forms ice and concentrates the unfrozen ingredients; when the product thaws, the original droplet structure may not rebuild. The result can look thin, oily, or lumpy even though the jar was not contaminated. Vigorous stirring may improve the appearance but often does not fully restore the original texture.
Heat can also destabilize an emulsion. A jar repeatedly warmed and chilled may show oil at the surface or watery pockets. For a commercial acidified mayonnaise that has otherwise been handled correctly, mild separation alone is more a loss of texture than proof of dangerous bacterial growth.
Commercial and homemade mayonnaise are not the same case
Commercial mayonnaise is formulated with acid and produced under controlled conditions. USDA notes that the acidity of mayonnaise tends to inhibit many bacteria, and it lists opened commercial mayonnaise for refrigerated storage of about two months. That does not make a mixed salad or sandwich shelf-stable: meat, eggs, fish, or other ingredients in the dish can be the part that supports rapid bacterial growth.
Homemade mayonnaise is different because it may contain raw shell egg. USDA recommends using pasteurized eggs or pasteurized egg products and refrigerating homemade mayonnaise, with a four-day use period. Do not apply the storage life of a commercial jar to a homemade batch simply because both look white and creamy.
When watery mayonnaise should be discarded
Discard a jar with mold, a swollen lid, active gas, unusual pink or green discoloration, a rotten or strongly yeasty odor, or obvious contamination from food crumbs. If an opened commercial jar has been held too warm for a long time, separation is not the main question; the temperature history is. USDA emergency guidance says opened mayonnaise should be discarded if it has been above 50°F (10°C) for more than eight hours.
A little oil around the surface after accidental freezing is very different from slime or a pressurized package. Do not taste suspicious mayonnaise to decide whether it is safe. Also avoid adding water, milk, or other ingredients directly to the storage jar to thin it, because that changes the product and can introduce microorganisms.
What to do with a jar that simply broke
If you know the mayonnaise froze, remained cold, and has no other warning signs, the separation is primarily a quality defect. For many uses the altered texture is unpleasant enough that replacing the jar makes sense. If it is only slightly separated from normal refrigeration, stir a small portion and see whether it returns to a smooth emulsion.
The decision becomes clearer when you separate three questions: Did the emulsion break? Was the product kept at a safe temperature? Are there actual spoilage signs? A “yes” to the first does not automatically mean a “yes” to the others. But if temperature control or hygiene was poor, a smoother appearance after stirring does not rescue the mayonnaise.
One more clue is where the water appears. A thin ring of clear liquid after a freeze-thaw episode is compatible with a broken emulsion; pockets that are foamy, stringy, or accompanied by gas are not. If the jar was accidentally frozen in the back of the refrigerator, note that history before assuming microbial spoilage. If no such explanation exists and several warning signs appear together, replacement is the sensible choice.
