Sesame seeds: calcium, protein and fats

Sesame is usually eaten by the spoonful, scattered over bread, salads or sauces—not as a 100 g bowl. That makes serving size central to interpreting its nutrition. The seed is dense in fat, minerals and protein by weight, but most people eat a relatively small amount at once.

What whole sesame contains

Sesame looks exceptionally nutrient-dense partly because it contains very little water. A tablespoon weighs only a small amount, so values per 100 grams can look enormous beside foods eaten in much larger portions. To understand the real contribution, translate those figures into the amount sprinkled on bread, salad, or yogurt. Sesame can add calcium, iron, magnesium, unsaturated fat, and some protein, but a spoonful is still a small addition. It is not nutritionally equivalent to eating a full serving of beans or another substantial protein food.

The USDA reference for whole dried sesame provides per 100 g about 573 calories, 17.7 g protein, 49.7 g fat, 11.8 g fiber, 975 mg calcium, 351 mg magnesium and 14.6 mg iron.

At 10 g, those figures become roughly 57 calories, 1.8 g protein, 5.0 g fat, 1.2 g fiber, 98 mg calcium, 35 mg magnesium and 1.5 mg iron.

Most of the calories come from fat

Of the nearly 50 g fat per 100 g, most is unsaturated: about 18.8 g monounsaturated and 21.8 g polyunsaturated, compared with roughly 7 g saturated fat. The seed is therefore energy-dense even though its fat profile is predominantly unsaturated.

The calcium number needs an asterisk

Calcium is a good example of why the exact product matters. Unhulled sesame can contain much more total calcium than hulled seeds, and tahini may be made from either type. Two food-composition tables can therefore report very different calcium values without either one necessarily being wrong. Total calcium in the food is also not the same as calcium absorbed by the body. If calcium intake is an important goal, sesame works better as a complementary source within a varied diet than as the only food expected to cover that need.

The famous 975 mg/100 g figure belongs to whole sesame with its outer layer intact. It should not be assigned automatically to hulled sesame or every jar of tahini. A current USDA Foundation analysis of creamy sesame butter, for example, contains only about 116 mg calcium/100 g.

Hull removal and the particular raw material used can dramatically change the final number. If calcium is a major reason you buy sesame, product-specific nutrition data are more useful than a generic seed value.

Is sesame high in protein?

At 17.7 g/100 g, the concentration is substantial. But 10 g supplies only about 1.8 g protein and 30 g about 5.3 g. A sprinkle contributes protein; it rarely serves as the main protein source in a meal.

Sesame is also a major allergen and must be declared prominently in many markets. For someone with sesame allergy, calcium and unsaturated-fat benefits are beside the point: tahini, hummus, breads, dressings, and spice blends can become less obvious sources. For everyone else, this mainly matters when cooking for guests or reading packaged-food labels. Nutritionally, modest amounts of sesame can enrich meals without turning the seed into a supplement. Grinding, toasting, or turning it into paste changes texture and ease of use, but it remains an energy-dense food, so the form should be chosen for the recipe rather than because one version sounds inherently healthier.

Iron and magnesium are concentrated too

Most of sesame’s calories come from fat, much of it unsaturated, which is why seeds and tahini are energy-dense even in modest amounts. That density is useful for adding flavor and body, but it also makes intentional portions sensible. Tahini allows a larger amount of sesame to be eaten smoothly in sauces, hummus, and dressings; whole seeds add crunch, and some may remain less thoroughly broken down during digestion. Choosing between them can therefore depend on cooking purpose as much as on which nutrient number looks highest on a table.

Thirty grams of the whole-seed reference would provide roughly 4.4 mg iron and 105 mg magnesium. As with other seeds, measured mineral content is not the same as the amount absorbed: phytate and other compounds can reduce mineral bioavailability.

The useful takeaway has two parts: whole sesame is mineral-dense, and both the amount eaten and whether the hull remains can substantially change what reaches the plate.
