Leeks hide a lot between their tightly wrapped layers. The outside may look acceptable while a brown stripe or slippery center appears when you split one open. Texture is usually more useful than color for deciding what that change means.
A sound leek has a firm white stalk and leaves that still hold their structure. With age, outer leaves can dry, yellow, or develop localized damage without the whole leek becoming rotten.
Dry brown tissue can be localized
Leeks often deteriorate from the outside inward, so a dry brown outer layer can be much less concerning than wet breakdown near the center. After cutting the leek lengthwise, look at whether the inner layers are firm and pale or whether they are translucent, mushy, and slippery. A small dry patch can be trimmed away for quality. Widespread softness with a sour or rotten smell suggests the tissue itself has begun to break down and the whole leek is no longer a good candidate for cooking.
If one layer is thin, brown, and dry, remove it and inspect what comes next. Firm pale tissue with a normal onion-like smell is a good sign that the defect is limited.
A bruised or dehydrated layer does not behave like soft rot. It stays relatively dry rather than turning into a wet mass.
Slime changes the answer
The long layered shape of a leek traps both soil and moisture, which is why storage condition matters so much. Water held between leaves can create a local pocket where softening starts even when the outside still looks acceptable. That is also why a quick glance at the green tops is not enough. Opening the stalk, separating the layers, and checking the base gives a more accurate picture. Washing should remove grit before cooking, but it cannot repair tissue that has already become slimy.
Bacterial soft rots in vegetables can produce water-soaked, soft, slippery tissue and may develop a strong rotten odor. If the leek’s center is brown and also wet, mushy, or leaking, treat that as deterioration rather than cosmetic discoloration.
Split the leek lengthwise. If the damaged tissue runs far down the stalk or several inner layers are breaking down, discard the leek instead of trying to peel indefinitely.
What each clue suggests
Brown color alone needs context. A dry brown center may result from age, dehydration, or physical damage, while a brown area that is wet, collapsing, and unpleasant-smelling is more consistent with spoilage. Texture is therefore the deciding clue. If the affected tissue is firm and limited, trim generously and use the sound portion promptly. If the discoloration extends through several soft layers, there is little value in trying to save a narrow strip from the middle.
- Dry wilted outer layer: trim it away.
- Small dry brown stripe, sound tissue around it: remove and use the leek soon.
- Wet or slimy center: discard the affected leek if the damage is substantial.
- Mold or rotten odor: discard.
Do not confuse the normal slippery feel of freshly cut alliums with obvious spoilage coating. Leeks can feel slightly slick from their own plant juices, especially after cutting, but that is different from a thick film that develops during storage and comes with soft tissue or bad odor. Checking a newly cut interior gives a useful reference. If the surface only becomes moist after the knife passes through firm layers, that moisture is not the same signal as slime already present before cutting.
Washing does not reverse spoilage
To keep leeks usable longer, store them cold without leaving them soaked or sealed with heavy condensation. If they are washed in advance, dry the surface and the folds as well as practical before refrigerating. Once cut, protect the exposed end and plan to use the leek sooner because the cut surface loses moisture and gives microbes easier access. Good storage does not make a leek permanent, but it helps prevent the combination of trapped water and damaged tissue that leads to sliminess.
Leeks often hold soil between their layers, so thorough washing after cutting is normal kitchen practice. But rinsing cannot restore tissue that has become slimy from decay. The goal is to wash sound produce, not to wash deterioration away.
Brown and dry can be a localized quality defect; brown, wet, and slimy is a different signal. Opening the leek from end to end makes that difference easy to see.
