After hydration, squeezing out excess liquid can help TVP brown instead of steam when it goes into a skillet. Sodium is largely a recipe issue when the base product is plain. That shelf stability is one reason it works well in emergency cupboards, camping food, and low-waste meal planning, provided the final recipe supplies enough liquid and seasoning to make the texture appealing.
