What Are E-Numbers, and What Do They Really Mean on a Food Label?
An E-number is a European identifier for an authorized food additive. The “E” is not a danger rating and does not mean synthetic: ascorbic acid, pectin, and guar gum all have E-numbers. Authorization applies to specified food uses and conditions, so the same additive cannot simply be used without limits in every product.
