Cocoa powder looks spectacular on a per-100-gram nutrition table: lots of fiber, meaningful protein, and very high mineral numbers. But 100 g of cocoa powder is far more than a normal serving. A tablespoon is only about 5–6 g, so both views are needed.
What unsweetened cocoa provides per 100 g
The USDA Standard Reference entry for unsweetened cocoa powder lists about 228 calories, 37 g fiber, 19.6 g protein, and 13.7 g fat per 100 g, with only about 1.8 g total sugars.

The gap matters. Cocoa is nutrient-dense by weight, yet the spoonful added to oatmeal or yogurt contributes modest absolute amounts. Two tablespoons can add several grams of fiber, but they do not turn the meal into a high-protein food.
It is also important to separate unsweetened cocoa from sweetened drink mixes. Two tablespoons of a product whose first ingredient is sugar do not have the same nutrition profile as two tablespoons of 100% cocoa, even if both make a chocolate-flavored drink.
Why the fiber number is so high
Cocoa powder is made from cocoa solids after some cocoa butter has been pressed out. Removing part of the fat concentrates the nonfat portion of the bean, including cell-wall material and fiber.
That is why powder can contain far more fiber by weight than finished chocolate. The USDA reference for 70–85% dark chocolate contains about 10.9 g fiber/100 g, compared with 37 g in the unsweetened cocoa entry.
In practical terms, 10–15 grams of cocoa can contribute a few grams of fiber without requiring a huge serving. Most daily fiber will still come from foods eaten in larger amounts—beans, fruit, vegetables, whole grains—but cocoa can make a meaningful smaller contribution.
Cocoa powder still contains fat
Powdered cocoa does not mean fat-free cocoa. The amount left after pressing varies by product. European rules, for example, distinguish standard cocoa powder from fat-reduced cocoa using the proportion of cocoa butter in dry matter.
Cocoa fat is dominated by stearic, palmitic, and oleic acids. A spoonful contributes little total fat, but a baking recipe using a large amount of cocoa can make the difference more noticeable.
Is cocoa powder a protein food?
At 19.6 g protein per 100 g, the concentration looks impressive. At one tablespoon, it is only around 1 g. Cocoa can contribute to a meal’s protein total, but it is not usually the main protein source.
If cocoa is stirred into Greek yogurt, milk, or soy milk, most of the protein usually comes from the base food. Cocoa adds flavor, some fiber, and minerals, but its small serving size limits how many protein grams it contributes.
Minerals are the other standout
Per 100 g, the USDA entry provides roughly 499 mg magnesium, 13.9 mg iron, 6.8 mg zinc, 3.8 mg copper, and more than 1,500 mg potassium. A 5.4 g tablespoon provides about 5.4% of those numbers—around 27 mg magnesium and 0.75 mg iron.
Presence is not the same as absorption. Cocoa’s iron is non-heme iron, and bioavailability depends on the rest of the meal and compounds in the food.
It is therefore more useful to think of cocoa as one contributor among many. A tablespoon does not cover large mineral needs by itself, but it can add magnesium, iron, copper, and potassium to a diet that already includes other mineral-rich foods.
Not every unsweetened cocoa is identical
Two products can both list cocoa as the only ingredient yet differ in residual cocoa butter, alkalization, and exact nutrient content. That is why a package label may not perfectly match a generic food-composition entry.
Alkalization can also change color, flavor, and some cocoa compounds. If you are comparing two products, the Nutrition Facts panel and ingredient statement tell you more than assuming every “100% cocoa” product has exactly the same composition.
Bottom line
Unsweetened cocoa powder is genuinely rich in fiber and minerals by weight, but the serving is usually small. Use per-100-g numbers to compare products and spoon-level numbers to understand what you actually eat.
To estimate your own serving, multiply the label values by the number of grams you use. That simple step puts striking per-100-gram figures into the scale of an actual cup, bowl, smoothie, or baking recipe.
