Cracks, cavities, and hollow areas inside a watermelon can develop without making the fruit unsafe. Some are growth-related gaps, often grouped under “hollow heart,” where internal tissues fail to fill in normally. Others come from mechanical injury or uneven development. A clean, dry cavity surrounded by firm red flesh is very different from a crack filled with slime, mold, sour liquid, or collapsing tissue. The watermelon is judged by the condition of the flesh around the opening, not by the mere presence of empty space.
Some internal gaps form while the watermelon is growing
Watermelon flesh develops rapidly, and under certain pollination, temperature, or growth conditions the interior may separate and leave a hollow space. These gaps can look dramatic because the rind remains intact and gives no hint that the center is open. The surrounding flesh may still be crisp, sweet, and normally colored. In that case, the cavity is a quality or appearance defect rather than evidence of rot.
Large internal cracks can affect texture and sweetness because tissue did not develop uniformly. The fruit may be drier or less dense around the gap, but that does not automatically make it hazardous. If the cavity walls look clean, the flesh smells fresh, and there is no fuzzy growth or wet decay, you can cut around any unappealing dry tissue and eat the normal portion.
Impact damage produces a different kind of internal injury
Watermelons can be bruised when dropped, stacked roughly, or transported under pressure. UC Davis notes that internal bruising can lead to premature flesh breakdown and mealiness even when the rind does not show a severe wound. An impact crack may therefore be accompanied by a soft, darkened, grainy zone rather than a neat symmetrical hollow.
If one small area is bruised but the rest remains crisp and normal-smelling, trim well around the damaged section. If the crack is associated with widespread mushiness, leaking from the rind, or translucent water-soaked flesh, the problem is no longer just a harmless hollow. Extensive tissue breakdown makes the fruit poor quality and can create conditions favorable to spoilage.
Moisture, odor, and mold are the most useful warning signs
A dry gap with firm edges is reassuring. A cavity containing cloudy liquid, bubbles, slime, fuzzy mold, or an unpleasant fermented odor is not. Soft fruit gives mold more opportunity to penetrate below the visible surface, which is why USDA guidance recommends discarding moldy soft fruits rather than simply scooping out the affected spot.
Pay attention to the rind too. A split that opened to the outside during handling creates a route for contamination. If the exterior crack is fresh, clean, and the fruit was immediately handled under controlled conditions, commercial processors may use specific protocols, but at home there is usually no reason to take a chance on a watermelon with an old open split, dirt in the wound, leaking juice, or signs of decay.
Once cut, the storage clock matters
Refrigerate cut watermelon promptly. Even a perfectly normal hollow watermelon becomes a perishable cut fruit after opening. Store slices or cubes in a clean covered container, and discard them if they have been left at room temperature for more than about two hours. Temperature history matters because dangerous bacteria do not always create a visible warning.
The simplest rule is to distinguish structure from spoilage. A clean internal hollow surrounded by crisp, normal-smelling flesh can usually be treated as a growth defect. A crack associated with slime, fermentation, mold, external leakage, or broad tissue collapse is a reason to discard the fruit. The size of the hole matters less than what the tissue around it is doing.
Hollow spaces can also make a melon seem lighter or sound different when tapped, but tapping is not a reliable way to diagnose the interior. The real assessment begins after cutting. Use a clean knife and board so you do not introduce contamination while inspecting the crack. If the hollow is clean, simply remove any dry, tough edge tissue that is unappealing. If the knife picks up slime, rotten odor, or mold from the cavity, stop and discard rather than continuing to portion the fruit.
