Labels such as 95/5, 90/10 and 80/20 describe the lean-to-fat ratio of raw ground meat. A 90/10 product is approximately 90% lean and 10% fat by raw weight. It does not mean that 100 g of the cooked meat will contain exactly 10 g fat.

Moving from 95/5 to 80/20 adds 15 g fat per 100 g raw meat. At about 9 calories per gram of fat, that represents up to roughly 135 additional calories per 100 g before accounting for cooking losses.
The ratio is especially useful at the store because it lets you compare packages before cooking. Two trays that weigh the same can carry very different fat loads even when that difference is not obvious by sight.
Why cooked nutrition does not match the package ratio
Cooking removes water, and some rendered fat may drain into the pan. The final food weighs less. That is why 90/10 ground beef can show around 12 g fat per 100 g in a cooked composition table: the meat did not gain fat; water loss concentrated what remained.
Whether rendered fat is drained or retained in a sauce also changes the amount eaten.
This is also why 100 g raw and 100 g cooked are not the same amount of original meat. For recipes or tracking, it helps to know whether the portion was weighed before or after cooking.
Lean percentage is not the same as calorie percentage
An 80/20 product is 20% fat by weight, not 20% of calories from fat. Because fat provides 9 calories per gram while protein provides about 4, fat contributes a much larger share of total energy than its weight percentage suggests.
The same logic applies to 90/10. Ten percent fat by weight can still represent a substantial share of calories, so the label should not be read as a direct calorie percentage.
More lean tissue usually means more protein per raw ounce
When fat is replaced by lean muscle, raw protein concentration generally rises. After cooking, water loss can concentrate protein further, which is why very lean cooked ground meats can exceed 30 g protein per 100 g.
Choosing a leaner ratio therefore changes more than fat alone. It usually shifts the raw mixture toward more protein per unit weight, although the exact cooked result depends on yield and how much rendered fat is discarded.
Fat percentage changes cooking behavior
An 80/20 burger usually releases more rendered fat and tends to remain juicier at the same degree of cooking. A 95/5 patty contains much less fat and can dry out faster when overcooked. The “best” ratio therefore depends on both the recipe and the nutrition goal.
Ground meat used in a sauce may behave differently from a burger because rendered fat can be drained, mixed into the sauce or partly left behind in the pan. The cooking method changes how much of the original fat actually reaches the plate.
What to compare at the store
Use the lean/fat ratio to compare similar raw products. For actual calories in your meal, check the Nutrition Facts panel and serving size, then remember that cooking yield can change the final weight. A 4-ounce raw patty does not remain 4 ounces after cooking.
Also compare like with like. Ground turkey, beef and pork can each be sold at different lean percentages, so species alone does not tell you which package is leaner.
Bottom line
Read 90/10 as a description of the raw mixture, not a promise that cooked meat contains exactly 10% fat by final weight. Lean percentage is excellent for comparing purchases; cooked nutrition should be estimated from a matching cooked reference or the product’s own instructions and yield.
If you are comparing recipes, keep the basis consistent—raw with raw or cooked with cooked. That one detail prevents much of the confusion around ground-meat percentages.
