Squeezing an orange does not magically add sugar. It does, however, change how the fruit reaches you. The clearest difference is not that juice necessarily contains far more sugar per 100 g; it is that most of the fiber is gone, the drink is consumed quickly and a typical glass can contain the sugar from several pieces of fruit.
Per 100 g, the sugar numbers can look surprisingly similar
USDA data for oranges and 100% orange juice illustrate the point. Raw orange provides about 47 kcal, 9.4 g total sugars and 2.4 g fiber per 100 g. A typical 100% orange juice is around 45 kcal, 8.4 g sugars and only about 0.2 g fiber per 100 g.

If the sugar row is viewed alone, the difference looks small. The practical gap appears when serving size and food structure are considered.
A piece of fruit and a glass do not weigh the same
A medium orange weighing roughly 130 g provides about 62 kcal, 12 g sugar and just over 3 g fiber. A 240 mL cup of orange juice weighs roughly 240–250 g and can provide around 108 kcal, 20 g sugar and less than 1 g fiber.
The glass can therefore deliver considerably more total sugar even though its per-100-g concentration is similar. The reason is not added sugar when the product is genuinely 100% juice; it is that a drink can contain an amount of fruit that would take longer to eat in whole form.
Fiber is the most obvious composition difference
Juicing removes much of the pulp and cellular material that carries fiber. In the orange example, whole fruit provides about 2.4 g fiber/100 g versus roughly 0.2 g/100 g in juice—around twelve times as much.
The 2025 Dietary Guidelines Advisory Committee’s modeling found that fiber in the overall dietary pattern increased as the proportion of whole fruit increased relative to 100% fruit juice. U.S. guidance has therefore continued to emphasize getting at least half of fruit intake from whole fruit.
Why is whole fruit more filling?
Fiber is only part of the explanation. Chewing, intact cellular structure and the extra time required to eat solid fruit also influence satiety.
In a randomized study of 58 adults, participants consumed 125 kcal of apple in different forms before lunch. Whole apple produced greater fullness than applesauce or juice and reduced total lunch energy intake by about 15% compared with no preload. A separate MRI crossover study found that an isocaloric portion of whole apple had a gastric-emptying half-time of about 65 minutes, compared with roughly 38 minutes for apple juice.
Those experiments do not mean every glass of juice causes immediate hunger. They show that the physical form of the same fruit can materially change fullness even when energy is matched.
Juice sugars are also categorized differently
The World Health Organization classifies sugars naturally present in fruit juice as free sugars, alongside added sugars, honey and syrups. Sugars contained within the intact cellular structure of whole fruits and vegetables are not included in that category.
WHO recommends keeping free sugars below 10% of daily energy, with additional benefits below 5%. That does not make 100% juice identical to a sugar-sweetened soda—juice can supply vitamin C, potassium and other fruit compounds—but it helps explain why unlimited juice is not considered interchangeable with whole fruit.
Does juice need to be avoided?
No. A small serving of 100% juice can fit into a healthy dietary pattern. The practical issue is using juice as the default replacement for several whole-fruit servings or drinking large glasses because it “counts as fruit.”
Whole fruit is generally the stronger everyday choice: it retains much more fiber and usually provides greater satiety. Juice still contributes nutrients, but it is easier to consume more sugar and calories before feeling full.
