For food to become crisp in an air fryer, its surface has to lose water before the interior overcooks. The appliance helps by moving hot air rapidly, but it cannot dry a compact basket of wet food efficiently. When moisture accumulates around the pieces, the surface steams and stays flexible instead of turning into a dry crust.
That is why raising the temperature is not always the first fix. If the basket is packed or fresh potatoes go in dripping wet after rinsing, extra heat may brown exposed tips while protected surfaces remain damp. Start the diagnosis with moisture and airflow.
Surface drying matters more than many recipes make obvious
Washed potatoes and vegetables, tofu, and marinated meat can carry a film of water that must evaporate before browning accelerates. Pat food dry when the recipe allows and drain excess marinade. With fresh potatoes, drying after soaking is particularly important because clinging water adds an evaporation burden exactly when you want the crust to form.
Frozen food may also carry loose ice. Products designed to cook from frozen do not need thawing, but large sheets of freezer frost add water and can delay crisping.
An overfilled basket turns fast-moving air into humid trapped air
USDA cautions that overcrowding an air fryer can restrict circulation and produce uneven cooking. Crispness follows the same physics: pieces pressed together create damp contact zones and shield one another from moving hot air. Two smaller batches often produce better texture than one deep pile.
Shaking partway through cooking redistributes small pieces and exposes surfaces that were blocked. Philips recommends shaking foods cooked in more than one layer to improve air exposure. Fragile foods are better arranged in a single layer.
A little fat can help, but it cannot replace drying
On fresh ingredients, a thin film of oil can promote browning and improve crisp texture. More is not automatically better: excess oil can drip, smoke, or leave the coating heavy. Prefried frozen foods already contain fat and often need none added, so extra oil will not solve an airflow problem.
Solid liners can also reduce air exposure on the underside. Fries or wings often dry more efficiently when the open basket is left exposed, provided the manufacturer’s instructions are followed.
Temperature and piece size must allow browning in time
Very large pieces take longer to heat; very small ones can dry out before they develop the crust you want. Cut evenly and choose temperature for the food rather than defaulting to maximum heat. If the exterior is pale when the center is done, a short preheat or slightly hotter finishing stage may help. If the outside darkens too quickly, lower the temperature and extend the cook.
The practical rule: dry the surface, leave space, shake when appropriate, and use only the fat that helps the food. An air fryer creates favorable conditions for crispness, but it cannot overcome a wet surface or a basket with no path for air.
