Biting into a freshly picked olive is usually memorable for the wrong reason: it is intensely bitter and astringent. Oleuropein, a natural phenolic compound, is a major reason the fruit needs curing before it becomes a table olive.
The bitterness is natural
The International Olive Council notes that olives contain relatively little sugar—about 2.6–6%—and substantial oil, about 12–30% depending on cultivar and ripeness, along with bitter oleuropein. Most cultivars therefore are not pleasant to eat straight from the tree.
Oleuropein is not being removed because the fresh olive is a poison. Curing primarily reduces bitterness and develops the texture, acidity and flavor expected from table olives.
There is no single curing method
Spanish-style green olives may be treated with sodium hydroxide to speed debittering, then washed and placed in brine where lactic fermentation can occur.
Other olives go directly into brine, where microbial and plant enzymes slowly break down bitter compounds. Water curing and dry-salt curing are also traditional approaches.
Fermentation changes more than bitterness
During controlled fermentation, lactic acid bacteria and yeasts use available sugars and produce acids and flavor compounds. The drop in pH, together with salt and storage conditions, helps stabilize the product.
That is why two olives of the same cultivar can taste very different when one is naturally brined for months and another is rapidly lye-treated.
How long does it take?
There is no universal curing time. Alkali-treated styles may complete major steps in days or weeks, while natural brine fermentation can run for months. The International Olive Council describes multiple regional methods with very different timelines.
Home curing needs a tested process
Especially with sodium hydroxide, do not improvise concentrations or handling: lye is caustic. Brine fermentation also requires appropriate salt, sanitation, submersion and acidity to control spoilage.
A table olive is not simply a washed fresh olive. Curing transforms its bitterness, microbial ecology and flavor before it reaches the plate.
Curing also changes salt, acidity, and texture
Removing bitterness is only one part of the transformation. Brining and fermentation move salt and acids through the fruit, soften the flesh to different degrees, and create the characteristic aromas of table olives. A dry-salt cure produces a very different texture from a lye-treated green olive followed by brining, even when both end up pleasant to eat.
Commercial producers control concentration, temperature, hygiene, and time because those variables determine both flavor and stability. The process is therefore closer to controlled preservation than to simply soaking a bitter fruit until it tastes mild.
The finished olive can be very salty
Curing often leaves olives with substantial sodium. If sodium intake matters to you, compare labels because brands and styles differ. Rinsing table olives can remove some surface brine, but it does not reverse all of the salt that has diffused into the flesh.
Portion size is useful context: olives are usually eaten as a condiment or snack, not in 100-gram servings. Their fat is largely unsaturated, but the brine can make sodium the more important label value for frequent use.
After opening, the brine is part of storage
Jarred olives should normally remain covered by their liquid and be handled with clean utensils. Follow the refrigeration directions on the label once opened. Cloudiness can be normal in some fermented products, but unexpected gas, leaking containers, mold, or a clearly putrid smell are reasons to discard the product.
Color alone is not a reliable measure of whether an olive has been properly cured. Green, turning-color, and black olives can all be processed into safe table olives using different methods. The key is that the bitterness has been reduced through a controlled process and the final product has been handled and stored correctly, not that the fruit has reached one particular shade.
This is also why tasting raw olives straight from a tree is so different from eating packaged olives: the unpleasant bitterness is a feature of the uncured fruit, not evidence that the fruit is inherently inedible once processed.
Different curing styles also create different final flavors. Spanish-style green olives, Greek-style natural black olives, dry-salted olives, and oxidized black olives can vary in bitterness, acidity, firmness, and saltiness. None of those sensory differences alone tells you that one method is more “real” or safer than another. They reflect different processing goals, provided the process is controlled and the finished product is stored correctly.
