Parchment makes cleanup easy but can reduce direct metal contact; for maximum browning, roasting directly on a lightly oiled sheet or on foil may produce darker contact surfaces. Do not flip too early. Leaving a cut face against hot metal long enough allows moisture to leave and browning reactions to develop.

Some vegetables need different strategies

Zucchini, mushrooms and eggplant release more water than dense roots such as carrots or potatoes, so they are especially sensitive to crowding. Very sugary vegetables can brown before they crisp and may need a slightly lower heat or larger pieces. Frozen vegetables bring ice and thaw water, so they benefit from high heat and plenty of space. If you salt very watery vegetables far in advance, blot released moisture before roasting or expect a softer result.

Airflow inside the oven matters too. Opening the door repeatedly dumps hot dry air and replaces it with cooler, moister kitchen air, slowing surface drying. Convection can improve browning because moving air carries moisture away, though it may require lowering the set temperature slightly to prevent thin pieces from burning. Rotate trays if your oven has hot spots, but do not disturb the vegetables every few minutes. Stable heat and uninterrupted contact are part of the crisping process.

After roasting, transfer the vegetables promptly if the serving vessel traps steam. A deep covered bowl can soften crisp edges within minutes because hot pieces continue releasing moisture. Serve on a wide platter or leave uncovered until the last moment. Crispness is not only created in the oven; it can also be lost after the tray comes out if steam has nowhere to escape.

Preheating the empty sheet pan can intensify contact browning for sturdy vegetables, although delicate pieces may scorch and need a cold-start tray instead.

Crisp roasting is therefore mainly moisture management: give water a route out, expose the food to strong dry heat and let cut surfaces stay in contact with the hot pan long enough to brown. A soft tray is usually telling you that steam dominated the process.
