A gram of nori and a gram of kombu can look like similarly tiny amounts of dried seaweed while delivering radically different iodine. The difference can be well over one hundredfold.
Measured ranges in nori, wakame, and kombu
A study testing ten commercial samples of each type found:

Using those averages, 1 g nori gives about 37 mcg, 1 g wakame about 140 mcg, and 1 g kombu about 2,523 mcg. The U.S. adult tolerable upper intake level is 1,100 mcg/day, so the average kombu sample would exceed it with less than half a gram.
Why brown kelps accumulate so much
Seaweeds take up iodine from seawater, and many kelps in the brown-seaweed group are exceptionally effective accumulators. Iodide appears to play antioxidant and defensive roles in these organisms.
Red seaweeds such as nori generally do not concentrate iodine to the same degree. That creates the broad pattern kelp/kombu > wakame > nori, while individual samples can still break neat averages.
Species is only part of the variation
Growing location, water chemistry, season, age, and the part of the seaweed harvested all affect iodine. A classic market survey ranged from only 16 mcg/g in one nori sample to more than 8,000 mcg/g in processed kelp granules.
That is why a generic database value cannot predict the exact iodine in an unlabeled bag.
Drying, soaking, and boiling change exposure
Drying removes water and concentrates iodine per gram. Rehydration increases weight and lowers the concentration per 100 g of prepared seaweed.
Iodine is also water-soluble. Soaking and boiling can move some iodine into the water. If that water becomes broth and is consumed, the iodine may still end up in the meal; discarding it can reduce intake.
How much iodine do adults need?
The U.S. recommended dietary allowance for most adults is 150 mcg/day. The concern with very high-iodine seaweed is not reaching that amount—it is repeatedly overshooting the 1,100 mcg upper limit.
Both inadequate and excessive iodine can disrupt thyroid function in susceptible people.
The practical rule
Do not ask only “How much iodine is in seaweed?” Ask which species, how many dry grams, and how it was prepared. Nori may provide a moderate amount; wakame often provides more; kombu can move from enough to excessive in a surprisingly small piece.
Dry weight matters especially because a strip that looks insignificant may contain very little water. After soaking, that same piece can weigh several times more, but the iodine that was already present does not vanish simply because the seaweed gained water. When reading a database or label, check whether the amount refers to dried seaweed, rehydrated seaweed, or the ready-to-eat product.
Frequency changes the interpretation too. A small amount of very high-iodine seaweed used occasionally is not the same as eating it every day as though it were a precisely dosed iodine supplement. When the concentration is unknown, varying seaweed types and avoiding large regular amounts of kelp or kombu makes intake less likely to become unpredictably high.
Culinary use also creates very different portions. Kombu is often used to flavor stock and may be removed before serving, while nori is commonly eaten as the whole sheet or as flakes. Those patterns make “one serving of seaweed” an unreliable comparison unless grams and preparation are specified. Species, dry amount, and cooking method together tell a much more useful story than one generic iodine number.
Package format can make the numbers easier or harder to interpret. A sheet of nori may weigh only a few grams, while a piece of dried kombu can be much denser and more iodine-rich. Kelp powders and granules are especially easy to consume in small-looking spoonfuls, so a label that lists iodine per serving is more informative than judging the amount by volume or appearance.
It is also important not to assume that every product within one named seaweed has the study average. The kombu samples in the cited analysis ranged from 241 to 4,921 mcg per gram—a difference of more than twentyfold within the same broad category. That spread is the reason a calculated “safe gram amount” based on one average should not be treated as a universal portion rule.
For ordinary cooking, nori and modest portions of wakame are easier to fit into a varied diet because their iodine concentrations are generally lower than kelp, though they still vary. Kombu can be used for its culinary role without treating it as an everyday iodine supplement. When iodine intake needs to be managed precisely, relying on a standardized labeled source is more predictable than estimating from an unlabeled piece of dried seaweed.
