A basket of potatoes and onions looks efficient: both are pantry staples and both are often kept outside the refrigerator. For longer storage, though, two ventilated containers are a better setup than one crowded basket. The reason is mostly practical—moisture, airflow, odors, and spoilage control—not a simple rule that one vegetable instantly ruins the other.
They share several storage needs
Potatoes keep best in a cool, dark, dry, well-ventilated place. Light encourages greening, while warmer conditions speed respiration and sprouting. Dry onions also need low humidity and good air movement. UC Davis lists about 65–70% relative humidity for commercial storage of cured dry onions.
You do not need a humidity meter in a home pantry to use that lesson. Closed plastic bags and damp cupboards work against both foods; mesh, slatted bins, or perforated baskets make more sense.
Darkness matters especially for potatoes because light promotes greening and can accompany increased glycoalkaloid levels. Dry onions do not need darkness for exactly the same reason, but they do benefit from a dry, ventilated setting. Separate containers make it easier to meet those slightly different needs rather than treating the two crops as identical.
A bad piece creates a bad microclimate
If an onion softens and leaks moisture, or a bruised potato begins to rot, packing the two crops together holds that moisture and decaying material in a small space. Separate bins do not prevent spoilage, but they make inspection easier and reduce contact between problem pieces.
Odor is another reason. UC Davis notes that potatoes can pick up odors from volatile compounds released by other produce. Keeping strongly aromatic onions in their own basket helps preserve the relatively neutral flavor of stored potatoes.
Inspection is simpler when each crop has its own container. A leaking onion or soft potato can be removed before it wets neighboring pieces. In a home pantry, that routine check often matters more than any oversimplified chemical explanation.
The ethylene explanation is more complicated than social media makes it sound
You will often read that onions release ethylene and therefore make potatoes sprout. Potato physiology is not that simple. UC Davis reports that potatoes have low ethylene production and that their response depends on dose and storage conditions; low exposure can retard sprouting in some circumstances, while high concentrations can induce it. Ethylene can also encourage sprouting and decay fungi in onions.
So the useful household advice is still to separate them, but airflow, moisture, odor transfer, and inspection are better explanations than a one-line gas myth.
The complexity of ethylene does not mean storage conditions are irrelevant. Two crops packed into one closed container still share heat, humidity, and any moisture produced by a deteriorating piece. Separation remains sensible even when no single gas explains every storage failure.
A pantry setup that works
- Keep potatoes dark and ventilated.
- Keep dry onions dry and well ventilated.
- Do not wash either crop before storage.
- Check the bins regularly and remove wet, soft, or rotten pieces.
- Use separate mesh bags or baskets rather than one sealed box.
The containers do not need to be in different rooms. If the pantry is cool, dry, and dark, they can sit on nearby shelves as long as each crop has its own airflow and is not crowded into the same bin. The goal is to improve the immediate storage environment, not to create a precise separation distance.
Avoid warm locations beside the stove, a heating vent, or a sunny window. Heat shortens storage life for both foods. In a consistently warm kitchen, buying smaller amounts more often can work better than trying to hold a large supply for weeks.
What to do when they begin to sprout or soften
A sprouting onion can still be usable if it remains firm, dry, and free of rot; remove the sprout if you dislike its texture and use the onion soon. With potatoes, small sprouts can be removed along with any green tissue when the potato is otherwise firm, but very green, bitter, heavily sprouted, or badly shriveled potatoes deserve more caution.
The practical habit is to avoid treating the storage basket as a forgotten reserve. Rotate older pieces forward and inspect them regularly so one deteriorating vegetable does not become a moisture and odor problem for the entire bin.
Separation is not magic. It simply gives each crop more breathing room and makes one bad onion or potato less likely to become a whole-bin problem.
