For a small household supply, use a paper bag, mesh bag, or ventilated bin in the coolest dark location you have. Keep potatoes away from ovens, sunny windows, heating vents, and damp cabinets.

Professional storage temperatures are hard to copy at home

Extension recommendations for table potatoes often fall around 40–50°F, depending on variety and intended use. Most homes do not have a pantry that cool, so the practical goal is simply the coolest suitable location available without freezing or excess humidity.

At ordinary room temperature, potatoes may keep acceptably for only a week or two before quality starts changing, while a properly managed cool storage area can extend that period considerably.

Do not wash the whole batch before storage

Store potatoes dry. Washing adds surface moisture that can promote decay. Brush off loose soil if needed and wash just before cooking.

Remove cut, bruised, soft, or rotting potatoes early. One wet decaying tuber can create a poor microenvironment for the rest.

Keep potatoes separate from onions and ripening fruit

Separate bins improve airflow and make spoilage easier to spot. Several extension services also recommend keeping potatoes away from apples and pears because ethylene from ripening fruit can encourage sprouting under some conditions.

Light is another reason to choose a dark storage place. Exposure can encourage chlorophyll and glycoalkaloid formation, producing green patches and a bitter taste. Greening itself is not the toxin, but it signals conditions that can be associated with higher glycoalkaloids. Potatoes that are extensively green, very bitter, or heavily sprouted are better discarded.

Containers should allow some air exchange. Paper bags, open baskets, or ventilated boxes are usually better than sealed plastic, which can trap moisture and encourage rot. The goal is not to dry the potatoes out completely, but to avoid a warm, damp microclimate around the tubers.

Sprouts do not appear at the same speed in every variety or season. Potatoes that have been stored for months before purchase may sprout sooner at home than a fresh crop. Buying amounts that match your normal use is therefore a storage strategy in itself, especially in a warm kitchen.

If a potato has only small sprouts and remains firm, removing the sprouts and any green area generously may be reasonable for many household uses. Once it becomes very shriveled, soft, extensively green, moldy, or bitter, quality and safety concerns outweigh the value of saving it.

Refrigeration is debated because very cold storage can increase reducing sugars in potatoes, affecting flavor and browning when they are fried or roasted at high temperature. If a refrigerator is the only cool place available, the trade-off is different from leaving potatoes in a hot, bright kitchen. Cooking method and local conditions matter.

Do not store potatoes in airtight containers with damaged tubers. One rotting potato can raise humidity and spread decay to neighbors. Removing bruised or soft pieces early is a simple way to extend the useful life of the rest of the batch.

Storage location should be chosen by observing the home, not by copying a perfect laboratory temperature. A dark cupboard on an interior wall may stay much cooler than a shelf beside the oven or a sunny utility room. Checking a few likely places with an inexpensive thermometer can reveal where potatoes, onions, and other pantry produce actually keep best.

Buying smaller amounts more often is often the simplest solution when storage conditions at home are warm.

Inspect them instead of relying on a calendar

A tiny sprout does not automatically make the entire potato unusable, but it is a signal that storage life is advancing. As potatoes age they may become shriveled, green, bitter, or extensively sprouted. Buying an amount you can realistically use is often more effective than trying to store months’ worth in a warm kitchen.
