Culinarily, their differences are useful rather than problematic. White potato is neutral and works naturally in soups, hashes, roasts, and mashed dishes. Sweet potato contributes sweetness and color and pairs especially well with spices, legumes, and oven cooking. Rotating both broadens flavor and micronutrient variety without treating either one as nutritionally inferior.
