You reach into the pantry and one potato has started growing a couple of little sprouts. Does that mean the whole potato is trash? Not necessarily. The concern is that sprouts, eyes, skin and green tissue can contain higher concentrations of glycoalkaloids, mainly α-solanine and α-chaconine.
A potato that is still firm, has no greening and only a few small sprouts can often be used after generously removing the sprouts, eyes and nearby tissue. Once it is heavily sprouted, green, soft, shriveled or bitter, trying to rescue it stops being worthwhile.

What grows along with the sprouts
Potatoes naturally produce glycoalkaloids as defense compounds. At high enough doses they can cause nausea, vomiting, abdominal pain and diarrhea.
EFSA identified acute adverse effects beginning around 1 mg of glycoalkaloids per kilogram of body weight in the available human evidence. That is about 60 mg for a 132-pound / 60-kg person and 80 mg for a 176-pound / 80-kg person. The practical difficulty is that you cannot look at one potato and know how many milligrams it contains.
Why trimming only the tip of the sprout is not enough
Higher concentrations tend to occur in sprouts, eyes, skin and the tissue just beneath or around them, especially after light exposure or other stress.
If the potato is otherwise in good condition, remove the eye and a little surrounding flesh rather than simply snapping off the visible sprout.
Green is not the toxin, but it is a warning worth listening to
The green color itself is chlorophyll and is not toxic. What it tells you is that the potato has been exposed to light, a condition that can also encourage glycoalkaloid production.
A small isolated patch can be cut away generously on an otherwise firm potato. When greening is widespread, discarding the potato is the more sensible choice.
The frying pan is not a rescue plan
Peeling and cooking can reduce glycoalkaloids, but the effect varies widely with the method and conditions. EFSA reports broad ranges rather than one dependable percentage.
That variability is exactly why boiling, baking or frying should not be used to “fix” a potato that is heavily green or heavily sprouted. Starting with a potato in good condition is the reliable step.
The pantry can delay the problem
Store potatoes somewhere dark, cool, dry and well ventilated. Light encourages greening and warm storage speeds sprouting.
The goal is not to keep potatoes unchanged forever; it is to avoid creating the conditions that make them deteriorate faster and leave you guessing later.
The kitchen rule to remember
Firm, not green and only lightly sprouted: trim generously and use it. Heavily sprouted, green, soft, shriveled or bitter: throw it out.
There is no magic number of sprouts. The condition of the whole potato is what matters.
