You open a bag of green beans and notice rusty brown freckles on several pods. They look less fresh, but a dry brown spot is not automatically rot.
Green beans can brown from bruising, aging, ethylene exposure, and chilling injury. The decision becomes different when a spot is wet, sunken, soft, slimy, moldy, or spreading into collapsing tissue.
Chilling can create rusty-looking spots
UC Davis describes discrete rusty brown spots as a common symptom of chilling injury in snap beans stored cold for long enough. Those spots begin as a physiological injury rather than a fungal colony, although injured tissue becomes more vulnerable to decay afterward.
That is why a bean can be firm and normal-smelling even though the surface is marked.
Judge the tissue around the color

One bad bean does not always ruin the bag
If one pod is wet and rotten but the rest are dry, firm, and completely normal, remove it and inspect the beans touching it. FDA’s general produce guidance supports discarding rotten produce while trimming ordinary damaged areas on otherwise sound items.
If several beans are stuck together with soft decay or fungal growth, the problem is no longer isolated. UC Davis notes that postharvest rots can develop in clustered “nests,” especially when free moisture is present.
Faded green is also a quality clue
Beans lose green color as they age, and ethylene exposure can accelerate browning. A dull pod may still be edible, but it is likely to be less tender than a fresh one.
The rule to use at the sink
Brown plus dry and firm can be a quality defect; brown plus wet and soft is decay until proven otherwise. Remove rotten pods, wash sound beans under running water, and cook aging beans promptly rather than storing them for several more days.
Storage conditions can prevent some discoloration and help you judge the rest
Green beans are sensitive to both dehydration and very cold storage. In a home refrigerator, keeping them unwashed in a breathable or loosely closed bag in the crisper drawer usually protects texture better than leaving them exposed to circulating dry air. Washing before storage can leave surface moisture trapped around the pods, which encourages faster deterioration if they are not dried thoroughly. The goal is a cool, humid environment without free water sitting on the beans. Use them within a few days for the best color and snap rather than waiting until every pod shows age.
When brown spots appear, look beyond color. A dry, superficial rusty patch on an otherwise crisp bean is mainly a quality issue and can often be trimmed. A wet, sunken, slimy or rapidly spreading lesion is more concerning because it suggests tissue breakdown and possible microbial spoilage. Smell also matters: fresh beans should smell mild and vegetal, not sour or fermented. If several beans in the bag are soft or leaking, inspect the rest individually and discard any that show the same deterioration rather than simply cutting away one dark point.
Cooking does not “rescue” produce that is clearly spoiled. Heat can kill many microbes, but it does not reverse decomposition or make badly deteriorated tissue good quality again. On the other hand, throwing away every firm bean because of a small dry cosmetic blemish creates unnecessary waste. The useful decision is based on the condition of the tissue: crisp and dry with a limited surface mark can usually be trimmed and cooked; soft, slimy, moldy, foul-smelling or extensively damaged beans belong in the bin. Better storage buys time, but careful inspection is what decides whether an individual pod is still worth using.
If you buy beans in a sealed bag, condensation is worth noticing. Visible droplets can speed deterioration, especially after the bag warms and cools repeatedly. Once home, transferring the beans to a dry container with a little ventilation can help if the original package is very wet inside.
