If 100 g dry chickpeas becomes well over 200 g after cooking, the protein did not vanish. It is simply distributed across a larger amount of food that now contains much more water.

Chickpeas also contribute iron and folate

Cooked chickpeas provide around 2.9 mg iron per 100 g, or about 5.8 mg in 200 g. It is nonheme iron, whose absorption is more variable than heme iron from meat and seafood. Pairing the meal with vitamin C-rich foods such as peppers, tomatoes, citrus, or kiwi can improve nonheme iron absorption.
