That is why cream of tartar is common in meringues, angel food cake, and soufflés.

It can pair with baking soda

Baking soda releases carbon dioxide when it reacts with acid. Cream of tartar can supply that acid. Modern baking powder uses the same general idea by packaging baking soda with dry acids so leavening begins when moisture and heat arrive.

It also helps with smooth candy and syrups

Acid can split some sucrose into glucose and fructose. Those different sugars interfere with orderly sucrose crystals, which can help keep a syrup or candy from becoming unexpectedly grainy.

Substitutions depend on the job

Because recipes often use only a fraction of a teaspoon, a small container can last a long time in a home pantry.

Because cream of tartar is potent in small quantities, measuring with proper spoons matters more than estimating by eye. A heaped quarter-teaspoon can be noticeably different from a level measure in a small batch of meringue or cookies. Precision is particularly helpful when the ingredient is balancing baking soda, because excess acid or alkali can affect both flavor and browning.
