Eggs pack a substantial amount of nutrition into a small portion. One large egg, roughly 50 g edible weight, provides about 6–6.5 g protein, around 5 g fat, and roughly 70–80 calories. The final number changes with egg size and added cooking fat.

Those values describe whole cooked egg without added oil. A fried egg can contain more energy if it retains butter or oil from the pan.
The per-egg column is often more useful in the kitchen because people count eggs rather than weigh 100 grams. Two large eggs would provide roughly twice these amounts, although actual egg size varies. A breakfast built around two eggs therefore lands near 12–13 g protein before bread, dairy, beans, or any other foods are added.
Protein comes from both the white and the yolk
Egg white is mostly water and protein with almost no fat. The yolk contains nearly all the fat and many of the vitamins and minerals, but it also contains protein. Removing every yolk lowers calories and fat but also removes a substantial share of the egg’s micronutrients.
Whites and whole eggs therefore serve different goals. Egg whites add protein with very little fat, while the whole egg delivers a broader nutritional package even though it provides fewer grams of protein per calorie than the white alone.
For practical meal planning, mixing whole eggs with extra whites is another option: it raises protein without removing every yolk. That changes the balance of protein, fat, and micronutrients without turning the choice into an all-or-nothing decision.
Eggs are particularly rich in choline
NIH lists about 147 mg choline in one large hard-boiled egg. Adult Adequate Intakes are 550 mg/day for men and 425 mg/day for women, so one egg provides roughly 27% and 35% of those amounts, respectively.
Choline is involved in cell membranes, neurotransmission, lipid transport, and other functions.
This is one reason “about six grams of protein” does not tell the whole story. The yolk supplies nutrients that disappear from the picture when the egg is judged only by protein. Two eggs can contribute close to 300 mg of choline, which is nutritionally meaningful even though their protein amount is modest compared with a large serving of meat or fish.
They also provide B12, selenium, and vitamin D
NIH food tables list about 0.5 mcg vitamin B12 per cooked egg. USDA’s hard-boiled entry provides roughly 2.2 mcg vitamin D per 100 g along with meaningful selenium, phosphorus, and riboflavin.
Eggs are not a fiber food—they contain 0 g—and their calcium content is modest compared with dairy or bone-in canned fish.
That makes them a good example of why diet variety matters. Eggs can contribute choline, B12, and selenium, while fruits, vegetables, beans, and whole grains supply the fiber eggs do not contain. A food can be nutrient-dense without covering every nutrient category.
What about cholesterol?
Dietary cholesterol is concentrated in the yolk. A hard-boiled USDA reference is about 373 mg/100 g, or roughly 185–190 mg in a 50 g egg. Dietary cholesterol is not the same measurement as blood cholesterol, and the response to it depends on the overall diet and individual physiology.
For someone with individualized medical advice, egg frequency may need to fit that guidance. For basic food composition, the important point is not to let one nutrient erase the rest of the food’s profile. Looking at saturated fat, total diet pattern, and the foods served alongside eggs gives more context than the cholesterol number alone.
Cooking method mostly changes what you add
Boiling and poaching require no added fat. Ten grams of oil contains about 90 calories, so a fried egg’s calorie total depends partly on how much cooking fat actually remains with the food.
Accompaniments matter too. Cheese, bacon, bread, or sauces can change calories and sodium substantially without changing what was originally inside the egg. Scrambled eggs cooked in a nonstick pan with little added fat are nutritionally different from the same number of eggs cooked with butter and served with processed meat.
The useful takeaway
A large egg provides about 6.3 g protein and roughly 78 calories; it is not an enormous isolated protein dose. Its value is the combination of high-quality protein with fat, choline, B12, selenium, and other micronutrients in a compact serving. Use the whole meal—not just the egg count—to judge how much protein, energy, and saturated fat the plate ultimately provides.
