Erythritol, Xylitol, and Sorbitol: What Is the Difference?

Erythritol is mostly absorbed and excreted

Much of it is absorbed in the small intestine and leaves the body largely unchanged. That explains its very low calorie contribution and why it often creates a noticeable cooling sensation as it dissolves.

Xylitol matches sugar’s sweetness more closely

Xylitol works well when a formulation needs roughly sugar-like sweetness without sucrose. It is common in chewing gum and oral-care products. Larger servings can still cause gastrointestinal symptoms because absorption is incomplete.

One household caution matters: xylitol is toxic to dogs, so foods and sweetener containers that contain it should be kept securely out of their reach. If a dog gets into a xylitol-containing product, contact a veterinarian or emergency animal clinic immediately.

Sorbitol is less sweet and strongly holds water

Sorbitol is useful as both a sweetener and a humectant, helping products stay soft. Its incomplete absorption also means larger amounts are more likely to cause gas, bloating, or diarrhea.

Choose by function, not only calories

Cooling, crystallization, moisture, sweetness, and digestive tolerance all affect the finished food. The lowest-calorie polyol is not automatically the best technical substitute for every recipe.

Digestive tolerance can matter more than sweetness

Sugar alcohols that are not fully absorbed can reach the large intestine, where they may draw in water or be fermented by microbes. The effect differs by molecule and by person. Sorbitol commonly causes symptoms at lower amounts than erythritol, while xylitol often falls somewhere between. A few pieces of gum are not the same exposure as a large serving of sugar-free dessert.

If these sweeteners are new to you, portion size is a more practical starting point than the calorie number on the front of the package.

They do not replace table sugar identically in baking

Sucrose provides bulk, holds water, supports browning, and changes freezing behavior. Erythritol can recrystallize and create a cooling sensation; xylitol stays moist and is closer to sugar in sweetness; sorbitol is a strong humectant. A one-for-one swap can therefore change texture, color, and shelf stability even when sweetness seems similar.

Commercial blends often combine sweeteners because one ingredient alone cannot reproduce every function of sugar.

Xylitol requires special care around dogs

Xylitol is acutely toxic to dogs and can appear in gum, candy, dental products, and some nut-butter formulations. Keep xylitol-containing foods well out of reach, and accidental ingestion warrants urgent veterinary guidance. This specific canine hazard should not be generalized to every sugar alcohol, but none of these products belongs in a pet’s diet.

For human use, the sensible choice depends on digestive tolerance, recipe performance, cost, and the reason for reducing sugar. “Sugar alcohol” names a category, not a promise that all members behave the same way.

For dental health, xylitol and some other polyols are useful because oral bacteria do not handle them the same way they handle sucrose. That helps explain their use in sugar-free gum and candy, but those products do not replace brushing with fluoride toothpaste. Dental advantages and digestive tolerance are separate questions and can point in different directions as the dose increases.

Price and availability also shape everyday use. Erythritol is common in tabletop blends, xylitol appears frequently in gum and dental products, and sorbitol is widely used in confectionery and as a humectant. Choosing the ingredient that matches the job can prevent wasting an expensive sweetener in a recipe where its physical behavior is a poor fit.

When comparing packaged products, check whether the named polyol is the main sweetener or only one part of a blend; the digestive and taste effects may reflect the full mixture.

When trying one for the first time, use a small amount before reformulating an entire recipe. That gives you a chance to judge aftertaste, cooling sensation, texture, and digestive tolerance without wasting a batch.

It also helps reveal whether a cooling sensation or lingering aftertaste is acceptable before the ingredient becomes the dominant sweetener.
