Nutrition tables can make fresh and dried ginger look like completely different foods. The explanation is mostly water: drying concentrates everything per gram.
Fresh ginger per 100 g
USDA data list about 80 calories, 17.8 g carbohydrate, 2.0 g fiber, 1.8 g protein and 0.75 g fat. Raw ginger is roughly 79% water.
A realistic portion is much smaller
A 10 g piece of fresh ginger contributes only about 8 calories, 1.8 g carbohydrate and 0.2 g fiber. Its culinary impact comes much more from aroma and pungent compounds than from macronutrients.
Ground ginger is concentrated
Ground ginger provides roughly 335 calories and 14.1 g fiber per 100 g, but a teaspoon is only around 2 g—about 7 calories and 0.3 g fiber. Comparing 100 g fresh with 100 g dried is therefore not a realistic serving comparison.
Other forms change the recipe
Pickled ginger can add sodium and sugar. Crystallized ginger contains substantial added sugar and behaves more like candy. Ginger tea extracts flavor compounds but does not provide all the fiber in the root unless the solids are consumed.
Culinary amounts are small, but not irrelevant
Ginger is usually eaten in grams rather than 100 g servings. Its contribution of calories, protein or minerals to a normal meal is therefore modest even if a per-100-gram table looks more impressive. Its main culinary role is aroma, pungency and characteristic compounds; fresh, dried and powdered ginger are not equivalent because water and constituents are concentrated differently.
Fresh, dried and prepared ginger are not interchangeable
Fresh ginger works well when a recipe needs moisture, citrus-like aroma and a bright pungency. Grating or finely chopping it exposes more surface and releases flavor quickly into stir-fries, dressings and soups. Slices infuse more gradually and are easier to remove from tea or broth. Because fresh root contains so much water, several grams can be used without contributing many calories.
Ground ginger is far more concentrated by weight and has a warmer, less fresh-tasting profile. It is useful in baking, spice blends and recipes where a dry ingredient is preferable, but substituting it spoon-for-spoon for fresh ginger would overwhelm many dishes. A small pinch can flavor an entire batter. The chemistry also differs because drying shifts some gingerols toward shogaols and other compounds, so the two forms should be chosen for flavor as well as convenience.
Prepared products need their own labels. Pickled ginger may contain considerable sodium and added sugar depending on the recipe. Crystallized or candied ginger is coated or cooked with sugar and should be thought of more like confectionery than plain root. Bottled ginger juice or shots can range from almost pure ginger extract to sweetened beverages with fruit juice, so “ginger drink” does not describe one nutrition profile.
Storage changes quality too. Whole fresh ginger keeps longer than a cut surface, particularly when kept dry and cool in the refrigerator. It can also be frozen for longer storage and grated while still firm. Ground ginger should be protected from heat, light and moisture because aroma fades over time. Choosing the form according to the recipe—and judging its nutrition in the portion actually used—gives a much clearer picture than comparing 100 g of powder with 100 g of fresh root.
Ginger’s strong reputation as a “functional” ingredient can also lead to unrealistic serving assumptions. Research on ginger compounds or supplements may use preparations that are not equivalent to a few slices in dinner, so culinary ginger should not be described as a treatment for disease. It can be a flavorful way to season food with little added sodium or sugar, which is a practical benefit on its own. If someone uses concentrated supplements, especially alongside anticoagulant medication or before surgery, that is a different context from normal food use and is worth discussing with a health professional.
Fresh ginger can also be peeled with a spoon or used unpeeled when the skin is thin and well washed, depending on the recipe. Older roots may have tougher skin and a more fibrous texture, so preparation changes with the condition of the piece rather than following one fixed rule.
Fresh and dried also differ chemically
Fresh ginger is rich in gingerols, while drying and heating promote conversion toward compounds such as shogaols. That changes flavor and chemistry, but it does not make one form universally healthier.
Always compare ginger in the form and portion people actually use.
