How to read sugar, fat, and sodium on a Nutrition Facts label

A Nutrition Facts label becomes much easier once you separate three questions: what is in one serving, how that serving compares with a daily reference, and how many servings you actually eat.

A Nutrition Facts label is not just a scoreboard of “good” and “bad” numbers. It answers three different questions: what is in one labeled serving, how that amount compares with a Daily Value, and how much you actually eat. Confusing those questions is where most label-reading mistakes begin.

Start with serving size

In the United States, the calories and nutrient amounts on the Nutrition Facts panel refer to the labeled serving. If one serving lists 280 calories and you eat two servings, the total becomes 560 calories and each listed nutrient amount doubles as well.

FDA’s sample label, for example, shows 850 mg sodium in one serving and 1,700 mg in two servings. The food did not change; the amount eaten did.

Serving size is not necessarily a recommendation. It is a standardized reference designed around amounts people typically consume. If your portion is larger or smaller, the label becomes useful only after you adjust the numbers to the amount on your plate.

Total sugars and added sugars are not the same thing

Total Sugars includes naturally occurring sugars plus any sugars added during processing. Milk lactose and fruit sugars can therefore appear in Total Sugars even when no table sugar was added.

Added Sugars is listed separately underneath. If a yogurt contains 15 g Total Sugars and “Includes 7 g Added Sugars,” then roughly 8 g is naturally occurring and 7 g was added.

This distinction is especially helpful for dairy and fruit-based foods. Two products can show similar Total Sugars while one has 0 g Added Sugars and the other includes several grams added during manufacturing. The ingredient list can add more context by showing sugar, syrups, honey, juice concentrates or other sweeteners.

Look at saturated fat, not just total fat

Two foods can contain the same total fat but very different saturated fat. If product A has 15 g total fat and 2 g saturated fat while product B has 15 g total fat and 8 g saturated fat, total fat alone hides a 6 g difference in saturated fat.

FDA’s Daily Value for saturated fat is 20 g on a 2,000-calorie reference diet. It is a “less than” target, not a goal to hit.

Total fat still matters for energy density and for understanding the food, but it does not describe fat quality by itself. Nuts, olive oil, cheese and a fried snack can all contain substantial fat while differing considerably in saturated versus unsaturated fat and in the other nutrients they provide.

Sodium needs both milligrams and context

The U.S. label lists sodium, not salt. FDA’s Daily Value is 2,300 mg sodium. One serving with 575 mg therefore supplies 25% DV; two servings would provide 1,150 mg, or 50% DV.

If you are comparing with a European label that lists salt instead, the rough conversion is 1 g sodium ≈ 2.5 g salt.

Portion size can change the interpretation quickly. A soup with 400 mg sodium per cup may look moderate until you notice that the container holds two cups and you usually eat all of it. Always connect the milligrams to the amount you actually consume.

Use the 5% and 20% DV shortcut

FDA describes 5% DV or less per serving as low and 20% DV or more as high. This is especially useful for nutrients such as saturated fat, sodium, added sugars, fiber, vitamin D, calcium, iron, and potassium.

For example, 23% DV saturated fat is high for one serving; 4% DV is low. The shortcut does not make the entire food healthy or unhealthy—it tells you how much that serving contributes for that nutrient.

The same percentage can be desirable or less desirable depending on the nutrient. A high %DV for fiber or calcium can be useful; a high %DV for sodium may be something you want to compare across similar products.

Added sugar has a Daily Value; total sugar does not

FDA sets the Daily Value for Added Sugars at 50 g on a 2,000-calorie diet. Total Sugars does not have a %DV because there is no established Daily Value for total sugar.

That distinction prevents a plain dairy food or fruit-containing product from being treated exactly like a product with the same grams of sugar added during processing.

A food showing 12 g Total Sugars and 0 g Added Sugars therefore communicates something different from one showing 12 g Total Sugars including 10 g Added Sugars. The total amount is similar, but the source and food matrix are not.

A 20-second label routine

First, check serving size and servings per container. Second, scan saturated fat, sodium, and added sugars. Third, look at fiber and other nutrients relevant to your goal. Fourth, multiply the numbers if your actual portion differs from the labeled serving.

When comparing brands, keep the serving basis consistent. If two products use very different serving sizes, either convert them to the same weight or compare how much you would realistically eat. Otherwise the smaller labeled serving can look artificially better.

The useful takeaway

The label is most useful when you compare like with like and connect the listed serving with the amount you actually eat. Total fat is not the same as saturated fat, Total Sugars is not the same as Added Sugars, and a %DV describes one nutrient in one serving—not the overall quality of the food.

Use the panel to answer concrete questions rather than to search for one perfect score: Which bread has less sodium? Which yogurt has more protein and less added sugar? How much saturated fat is in the amount you actually eat? That is where the Nutrition Facts label becomes practical.
