A sunken spot on a bell pepper can come from several different problems: pressure or bruising, chilling injury, a growing disorder, or active decay. The most useful question is therefore not simply whether a dent exists. It is what the tissue in and around that dent feels like.
A small, dry, firm damaged area on an otherwise sound pepper can often be trimmed away. A wet, translucent, slimy, mushy, or rapidly spreading spot behaves much more like rot and is a reason to discard the pepper.
Dry damage and soft rot do not feel the same
Peppers bruise when they are compressed during harvest, shipping, grocery handling, or storage at home. A bruise can leave a localized depression without turning the whole fruit rotten. Blossom-end rot is another possibility: it can create a dark, sunken lesion at the blossom end because of a physiological calcium-and-water imbalance while the fruit is growing.
If a defect remains dry and localized and the surrounding wall is firm, trimming well beyond the damaged tissue may leave usable pepper.
A dry injury also tends to have a clear boundary and remain structurally stable. If the area begins to soften around the edges, leaks liquid, or expands rapidly, the situation is changing and should no longer be treated as a simple bruise.
Wet and collapsing spots are more concerning
Soft rot produces a different texture. Tissue becomes water-soaked, slippery, translucent, or collapses with light pressure. Decay can extend beneath the visible margin, so cutting exactly along the color change may not remove everything affected.
Cold injury can muddy the picture. Bell peppers are chilling-sensitive; UC Davis lists pitting, water-soaked areas, softening, seed-cavity discoloration, and increased decay among the possible symptoms. A deeply pitted pepper with abnormal softness deserves more caution than one with a small dry bruise.
Chilling injury can also make tissue more vulnerable to secondary decay. A spot may begin as a physiological problem and later become an entry point for microorganisms, so the current texture matters more than guessing the original cause.

After cutting, inspect the inner wall and seed cavity too. A pepper that appears to have one external bruise but reveals wet internal breakdown is no longer a minor surface-damage case.
If you trim a dry lesion, cut into clearly firm, normal-looking tissue rather than shaving off only the discolored surface. Then use the pepper soon; damaged produce generally has a shorter useful storage window than an intact pepper.
What about one tiny mold spot?
USDA guidance treats bell peppers as firm vegetables: a very small surface mold spot on genuinely firm produce can be cut away at least 1 inch around and below the growth, keeping the knife out of the mold itself.
That advice becomes less useful once the pepper is soft, wet, internally rotten, or covered in multiple spots. In those cases, the defect is no longer a neat surface problem, and discarding the whole pepper is the cleaner decision.
Clean the knife and cutting board after trimming mold or suspicious tissue so it is not transferred to other produce or ready-to-eat food.
Do not taste a soft spot to test it
Flavor cannot certify food safety. You can make this decision by looking at the extent of damage, feeling the surrounding tissue, checking for slime or leaking liquid, and noticing any off odor. There is no benefit to sampling visibly deteriorated tissue.
Storage history adds context. A pepper that has been wrinkled for many days and now has several soft depressions is a different case from a fresh, firm pepper with one small dry shipping bruise. The accumulation of warning signs matters.
The rule to remember
A dry, localized dent can be a trim-and-use problem; a wet, mushy, spreading dent is a toss-it problem. The shape of the spot matters less than whether the pepper’s tissue is still structurally sound.
