Cut potatoes darken because breaking their cells lets an enzyme called polyphenol oxidase react with phenolic compounds in the presence of oxygen. Brown, gray or nearly black pigments then form. If the potato was sound and the color appeared only after cutting, the discoloration by itself does not mean the potato has spoiled.
