White rings inside a beet: what they mean

White or pale circles inside a beet are usually a physiological growth pattern called zoning, not rot. If the root is firm, smells normal, and has no wet breakdown, mold, or mushy tissue, the rings themselves do not make it unsafe to eat.

A red beet can look almost striped when you slice it across: dark crimson bands alternate with pale or nearly white rings. Those circles can form while the root is growing and are not evidence that the beet rotted from the inside.

The pattern is called zoning. University of California Agriculture and Natural Resources notes that high growing temperatures and cultivar differences can make pale rings more pronounced.

Why the rings form

Pale rings often reflect growth zones inside the root. Beets store sugars and pigments as layers of tissue develop, and color intensity does not have to be identical from one zone to the next. Some cultivars show obvious zoning even when perfectly fresh. A cut surface with regular circles, firm tissue, and the normal earthy aroma fits pigment variation much better than decay. The orderly geometry of the pattern is useful evidence: spoilage lesions are more likely to be irregular, soft, wet, or associated with damaged tissue rather than neat concentric bands.

Beets enlarge in concentric zones. Pigment does not always accumulate equally in every layer, so some bands can remain much lighter than others. The result is a regular pattern with the same firm texture as the surrounding red flesh.

This is especially obvious in naturally striped cultivars such as Chioggia, where pink and white rings are a defining trait rather than a defect.

Color change versus tissue breakdown

A normal pale ring is dry to the cut and has the same structure as the rest of the root. Decay is different: it makes tissue wet, mushy, hollowed out, moldy, or foul-smelling.

If a white area looks cottony rather than like part of the flesh, or if it sits beside a soft water-soaked cavity, do not assume it is harmless zoning simply because it follows a ring.

Does zoning change the taste?

Color matters less than texture when deciding what the rings mean. Translucent, collapsing, wet areas or an unpleasant odor suggest damage or spoilage and should not be dismissed as normal striping. Visible mold or a cavity spreading from a wound is also a different pattern. In a sound beet, the pale bands should feel much like the darker bands around them. Cutting through the center with a clean knife and looking at more than one surface helps distinguish repeated internal zoning from a localized defect that is actually breaking down.

The main difference is usually visual. Flavor and color intensity can vary somewhat between cultivars and growing conditions, but a firm zoned beet can be roasted, boiled, grated, or pureed just like a uniformly red one.

Peeling a small area can help when the outer skin is old or damaged, but there is no need to carve away pale internal rings if the tissue is sound. In naturally striped beets, the bands repeat through the root and may become especially obvious in thin slices, where they can be highlighted in salads or pickles. If the beet is deeply shriveled, very soft, or leaking, the question is no longer the ring pattern but the overall condition of the root. Firmness, odor, and tissue integrity tell you far more about freshness than trying to judge quality by how intensely red the cut surface appears.

If you grow beets yourself, zoning can vary even within the same crop. Weather, cultivar, and root development all influence appearance, so one unusually striped beet is not automatically evidence that the entire harvest has a storage problem.

How to read the cut surface

Cooking can soften the visual contrast because pigments move and the tissue changes, although strongly striped varieties may keep a clear pattern. Flavor cannot be predicted from ring color alone either; sweetness and earthy notes depend on cultivar, maturity, and growing conditions. If a striped beet is firm and shows no signs of deterioration, it can be roasted, boiled, or pickled just like a uniformly red beet. In salads and preserves, the zoning may even be an attractive characteristic rather than something that needs to be removed.

  • Regular pale rings, firm flesh: normal growth pattern.
  • Striped cultivar: expected color.
  • Pale area that is wet or mushy: inspect as possible deterioration.
  • Mold or unpleasant odor: discard.

A change in pigment is not the same thing as a change in tissue. That distinction explains why a dramatic-looking beet can still be completely normal inside.
