White vs. brown eggs: are there nutrition differences?

USDA’s Food Safety and Inspection Service states that the breed of the hen determines shell color and that nutrient levels are not significantly different between white- and brown-shell eggs.

Why can brown eggs cost more?

Breed economics are one reason. USDA notes that brown-egg-laying hens have historically tended to be larger or less feed-efficient, which can increase production costs. Retail price also reflects housing claims, brand, organic certification and local demand.

What actually can change egg nutrition?

Hen diet can alter certain nutrients. Omega-3-enriched eggs, for example, come from feeding strategies designed to change fatty-acid content. Either a white or brown egg can be nutritionally enriched.

Egg size matters too. A 60 g egg naturally contains more calories and protein than a 50 g egg simply because there is more egg.

A fair egg comparison needs equal sizes

A 10–15 g size difference between two eggs changes the total protein, fat and micronutrients you eat far more than shell pigment does. A serious comparison therefore uses eggs of the same size or values per 100 g, then looks at feed or nutrient enrichment if it is searching for real compositional differences.

The practical consequence is simple: paying more for a brown egg only makes sense if the price reflects another feature you value—production system, certification, size or declared nutrient enrichment—not because brown shells are nutritionally superior.

Does a darker yolk mean a better egg?

Yolk color responds strongly to pigments in the hen’s diet. A deeper orange yolk does not automatically mean more protein, better safety or greater freshness.

Choose shell color for preference if you like; use the label and production claims for information that actually changes what you are buying.

Shell color comes from the hen, not from superior nutrition

Brown eggs are laid by breeds that deposit brown pigments on the shell, while other breeds lay white eggs. Shell color does not indicate that the hen ate a more natural diet or that the egg contains more protein. A large white egg and a large brown egg produced under similar feeding conditions are nutritionally very close. Differences in price often reflect breed size, feed requirements, housing system, regional demand, and production costs rather than a nutritional advantage of the shell.

Shell thickness is also not reliably predicted by color. Hen age, mineral intake, stress, health, and laying conditions influence shell quality. A brown shell can be thin and a white shell can be strong. Freshness and safe handling are more important when deciding which carton to buy.

Feed can change some nutrients, but the carton should say so

The hen’s diet can alter the fatty-acid and micronutrient profile of eggs. Omega-3-enriched eggs, for example, come from hens fed ingredients that raise omega-3 content in the yolk. Other specialty feeds may affect vitamin levels or yolk color. Those differences are linked to feeding practices, not to whether the shell is white or brown. If a nutrient has been intentionally increased, the label is the place to verify it.

Yolk color is another poor shortcut for overall quality. A deeper orange yolk often reflects pigments in the feed, such as carotenoids from corn, alfalfa, or other ingredients. It can look appealing and may correlate with some carotenoid differences, but it does not tell you that the egg is automatically higher in protein or safer to eat.

What matters more when choosing eggs

Size changes the amount of calories, protein, fat, and cholesterol because a larger egg simply contains more egg. Production labels such as cage-free, free-range, organic, or pasture-raised describe different farming standards and may matter for animal-welfare or purchasing preferences, but they should not be confused with shell color. Nutrition labels and verified production certifications are better evidence than visual appearance.

At home, refrigeration and cooking practices have a larger food-safety impact than choosing white or brown shells. Keep eggs cold, avoid using cracked eggs, and cook them to the degree appropriate for the person eating them. For ordinary nutrition, either color can fit equally well; choose based on freshness, size, price, production preferences, and any specific nutrient claim you actually want.
