All three can look like variations on a tart white dairy food, but they are made differently. If protein is the priority, skyr usually wins clearly; if fermentation diversity is the priority, kefir has the more complex culture.
Protein is where the biggest gap appears
Plain regular yogurt commonly provides roughly 3.5–5 g of protein per 100 g. Plain milk kefir is often in the 3–4 g range. Plain skyr is usually concentrated enough to reach about 10–11 g per 100 g.
That means a 150 g serving of skyr may provide around 15–17 g of protein, versus roughly 5–7 g in the same weight of ordinary plain yogurt. Brand labels should be used for exact comparisons.
Fat depends more on the milk
Skyr is often sold low-fat or nonfat, but the category itself does not guarantee that. Yogurt and kefir can also be full-fat, low-fat, or fat-free.
Fermentation is not identical
Traditional yogurt uses defined lactic-acid bacteria. Kefir relies on a broader community of bacteria and yeasts. Skyr is cultured and then strained or concentrated, which is why protein rises per unit weight.
Fermented does not automatically mean probiotic. Harvard notes that the term probiotic should be reserved for live microorganisms with demonstrated benefits in adequate amounts.
Sugar depends on the flavoring
In plain products, much of the listed sugar is naturally occurring lactose. Fruit-flavored and sweetened versions can contain substantial added sugar, so compare like with like.
The category gives you a clue; the specific label gives you the answer.
Compare equal servings, not just equal weights
Kefir is often drunk by the glass, while yogurt and skyr are commonly eaten from a bowl or single-serve pot. A 100-gram comparison is useful for composition, but the amount people actually consume can differ. A 250-milliliter glass of kefir may provide more total calories and protein than a small 125-gram yogurt simply because the serving is larger.
When choosing between products, compare the nutrition panel for the portion you expect to eat. Protein per serving, added sugar, saturated fat, and calcium are usually more practical than declaring one fermented dairy food universally best.
Lactose and texture are also different
Fermentation reduces some lactose in all three categories, but the final amount varies by culture and manufacturing process. Kefir’s longer and more diverse fermentation can make it easier for some people to tolerate, while skyr’s straining concentrates protein and changes the lactose per 100 grams in a different way. None should be assumed lactose-free unless the product is specifically labeled that way.
Texture affects use: skyr is thick enough for a high-protein snack, yogurt is versatile in sauces and breakfast bowls, and kefir is easy to drink or blend. The best option may be the one that fits the meal without requiring extra sweeteners.
“Probiotic” is not guaranteed by the category name
A fermented dairy food can contain live cultures without necessarily carrying a specific probiotic claim. Species, strains, viable counts, and survival through shelf life matter. Check the label if live microorganisms are an important reason you are buying the product rather than assuming every yogurt, kefir, or skyr has the same culture profile.
Skyr also deserves a label check because the name alone does not guarantee a fixed composition. Some products are very lean and protein-rich, while others include cream, sweetened fruit preparations, or flavorings. The same is true of Greek-style yogurt and kefir drinks. Brand-to-brand variation can easily be larger than the average difference between categories.
If satiety is the goal, protein-rich plain skyr or strained yogurt often has an advantage per spoonful. If drinkability and a broader fermentation culture are more important, kefir may be preferable. For cooking, plain yogurt can be the most versatile. The comparison becomes clearer once the intended use is defined.
Calcium can be similar across these foods when they are made from milk, but values still vary with straining and fortification. Straining removes some liquid components, while manufacturers may standardize or fortify products differently. If calcium is a priority, read the actual label rather than assuming the thickest product contains the most. The same principle applies to vitamin D, which is added in some markets and products but not universally.
