Why U.S. extension sources usually recommend cool pantry storage

The way you plan to cook the potatoes helps determine what storage concerns matter. For frying, deep roasting, or other high-temperature browning, conditions that encourage a large rise in reducing sugars can lead to faster darkening. For boiling, steaming, or mashing, the culinary effect may be different. Household storage advice is therefore easier to understand when it is connected to the cooking method rather than treated as a universal rule that applies identically to every potato dish.

Several U.S. university extension services advise storing potatoes in a cool, dark, well-ventilated location rather than a standard refrigerator. At low temperatures, potatoes can undergo cold sweetening: some starch is converted to reducing sugars.

That can make the potatoes taste sweeter and brown more quickly during frying or roasting. When reducing sugars react with the amino acid asparagine at high cooking temperatures, more acrylamide can form.

The UK Food Standards Agency recently changed its household advice

An ideal pantry is not merely ‘somewhere outside the refrigerator.’ It should be cool, dark, dry, and ventilated. A warm kitchen cabinet beside the oven can be worse than a cooler part of the home, and a sealed plastic bag can trap moisture. Cardboard boxes, perforated paper bags, or ventilated containers usually allow better airflow. Keeping potatoes away from light also matters because light exposure promotes greening, which is a separate quality and safety concern.

The FSA previously advised consumers not to refrigerate raw potatoes for the same cold-sweetening reason. After reviewing newer research, it now says that home refrigerator storage does not materially increase acrylamide-forming potential compared with storing potatoes in a cool, dark place.

The agency therefore allows either method at home, especially when refrigeration helps prevent food waste. That is an important update because it separates a plausible chemical mechanism from the actual size of the effect under household conditions.

So what is the practical U.S. choice?

If you have a reliably cool, dark, ventilated pantry or basement area, it remains an excellent option and avoids changes in sweetness and frying color. Typical U.S. extension recommendations for longer storage are often around 40–50°F—cooler than most homes but somewhat warmer than many refrigerators.

If your kitchen is hot and potatoes are sprouting or rotting before you use them, refrigeration can be a reasonable waste-reduction choice. Be aware that refrigerated potatoes may cook darker, especially when fried hard.

Storage is more than temperature

Green or heavily sprouted potatoes raise a different issue from refrigeration temperature. Greening signals light exposure and can accompany higher glycoalkaloid levels. Removing one small sprout does not automatically make a very green, bitter, or deteriorated potato a good choice. Visual and sensory inspection is still necessary even when potatoes were stored in the ‘right’ place. No storage method removes the need to check their condition before cooking.

Keep potatoes away from light to limit greening, avoid sealed damp bags, provide airflow, and remove rotting tubers. Those factors matter whether the potatoes are in a pantry, cellar, or refrigerator.

Whatever storage location you use, check potatoes regularly rather than leaving a large bag untouched for weeks. Removing damaged or rotting tubers helps prevent moisture and decay from affecting nearby potatoes. Buying an amount that matches household use can be more effective than searching for a perfect storage temperature. Good storage slows change; it does not stop biology completely, so turnover and inspection remain part of keeping potatoes in useful condition.

Cooking color still matters

If refrigeration is the only practical cool storage option, it makes sense to think about duration and later cooking rather than apply one absolute rule. A short stay followed by gentle cooking is not the same situation as long cold storage followed by intense frying. Official advice has evolved as evidence and household behavior have been re-evaluated. In a real kitchen, the useful approach combines local guidance, sensible storage conditions, and cooking that avoids taking potatoes to an excessively dark brown.

For fried, roasted, or baked potatoes, avoid pushing them to very dark brown. Acrylamide formation rises with high-temperature browning, so a golden color is a better target than a deeply browned surface.

Bottom line: a cool dark pantry remains the traditional U.S. default, but refrigerator storage should not be described as automatically dangerous; newer UK evidence shows the household acrylamide effect is smaller than older advice implied.
